How To make Orange Flower Almond Cookies
Cookie: 4 c Flour
1 ts Baking powder
1/2 ts Cinnamon
1 1/2 c Butter; softened
1 c Sugar
3 1/2 ts Orange flower water
Almond filling: 6 oz Almond paste; softened
2 tb Butter; softened
2/3 c Sugar
1/2 ts Cinnamon
1 ts Orange flower water
Sugar for tops DESCRIPTION: Delicately flavored orange cookie cups topped with an orange, almond-paste filling. Preheat oven to 350. Combine flour, baking powder and cinnamon, set aside. Beat together butter, sugar and orange flower water until light an fluffy. Stir in flour in 1/2-cup increments, blending after each. Form dough into a ball, wrap in plastic and refrigerate for 20 minutes. Beat together almond paste, butter, sugar, cinnamon and orange flower water until smooth. Roll 1/2 teaspoonfuls of paste into smooth balls, set aside. Roll heaping tablespoons of dough into 1 1/2-inch balls. Arrange one inch apart on buttered baking sheets. Use thim to make a 1/2-inch-deep indentation in each ball, fill indentations with almond paste balls. Bake 15-18 minutes or until bottoms are golden and almond paste is lightly
browned. Sprinkle hot cookies with granulated sugar. Cool on racks. Store airtight at room temp for 1 week, freeze for 3 months. From "The Joy of Cookies," -----

Makes 22 cookies
Ingredients:
2¼ cups (220g) almond flour (ground almonds)
1 cup + 2 Tbsp. (140g) Powdered sugar
3/4 teaspoon Baking powder
1/4 teaspoon Salt
2 Egg whites
1 teaspoon Vanilla extract
1 teaspoon Rose water (optional)
1 teaspoon Almond extract (optional)
Lemon zest from one lemon
1 teaspoon Lemon juice
For decoration:
Raw almonds
Directions:
1. Preheat oven to 350F (175C).
2. In a large bowl combine almond flour, powdered sugar, baking powder, lemon zest and salt.
3. In a separate bowl beat egg white until foamy.
4. Add beaten egg white, vanilla extract, rose water, almond extract, lemon juice to the flour mixture and stir until combined.
5. Shape the dough into small balls and place on a baking tray lined with parchment paper. Decorate each cookie with an almond (optional).
6. Bake for 15-18 minutes or until lightly golden (the cookies shouldn’t be too golden, otherwise they will dry out). Allow to cool before serving.

Orange Blossom and Sesame Cookies with Mint Tea!
In this episode we make two dishes from the Morocco Cookbook. We make orange blossom, anise seed, and sesame cookies that have a texture similar to biscotti. We also make mint green tea to accompany the cookies. This is a simple recipe that makes a delicious breakfast or dessert. Enjoy!
Amygdalota: Greek-Style Almond Meringue Cookies
Print the recipe:
Ingredients
4 egg whites
1 and 1/2 cups granulated sugar
¼ teaspoon salt
1 teaspoon pure almond extract
1 teaspoon orange blossom water or 2 teaspoons vanilla extract
4 cups almond meal (blanched almond flour)
Optional garnish:
7 ounces semis-sweet or dark chocolate, melted
1 cup blanched sliced almonds
Instructions
Preheat oven to 325 °F, 165 °C.
In a large mixing bowl whisk the egg whites on high speed until thick and stiff.
In a large mixing bowl combine the almond flour, salt, sugar, almond extract, and orange blossom water. Mix together until combined.
Fold the whipped egg whites into the almond flour mixture until a dough is formed.
Note:For a more dense, firm cookie, keep the dough very dense by adding up to 455 grams of almond flour to it. Dense cookie dough will not spread during baking. For a flatter cookie, allow the dough to be slightly looser.
Using a small ice cream scoop or 2 spoons, scoop walnut-sized pieces of dough onto baking trays lined with parchment paper.
Alternately, fill a piping bag that has been fitted with the star attachment with the batter. Do not fill more than halfway. Pipe swirls of these cookies onto baking trays that have been lined with parchment paper.
Sprinkle some sliced almonds over the top of each cookie.
Bake on the center rack of the oven for 15 minutes. The cookies will be pale and slightly golden around the edges.
If baking 2 trays together, make sure to rotate the baking sheets from top to bottom halfway through baking.
Allow the cookies to cool completely.
If decorating with chocolate, spread some melted chocolate on the bottom of each cookie place the cookies chocolate-side up on the baking tray until they set. You may also place them in the freezer or refrigerator for 15-20 minutes or until the chocolate hardens.

Orange Blossom and Honey Almond Cookies - The Cupcake Confession
These orange blossom and honey almond cookies are enriched with the ever so fragrant orange blossom water. They have a naturally caramel like flavour profile, thanks to the use of honey and gram flour (besan flour).
Ingredients:
120 grams all purpose powder
105 grams gram flour (besan)
1/2 teaspoon baking soda
150 grams salted butter
50 grams caster sugar
2 tablespoons honey
1 teaspoon orange blossom water
75 grams ground almonds
1/4th teaspoon cardamom powder

Bake In Preheated Oven on 170 °c for 10 to 12 minutes.. Check the cookies when it's 10 minutes.. Almond flour gets brown very quickly..
Let the cookies cool completely after baking..
