How To make Oven Baked Rum Raisin Apple Graham Cracker Pi
1 Graham-cracker pie shell
-ready-to-fill 20 oz Pie-sliced apples; unsweeten
-not pie filling 1 1/2 c Seedless raisins
1/3 c 80-proof rum
6 tb Free-pouring brown sugar
2 tb Cornstarch
2 ts Vanilla extract
2 ts Orange peel; grated
-(or 1 tsp bottled peel) 1 1/2 ts Pumpkin-pie spice
-(or 1/2 ts ea. cinnamon, -nutmeg, ginger) 1/4 ts Salt
Unwrap piecrust. Drain apples and combine with remaining ingredients. Spoon into shell. Invert an aluminum pie pan over the filling to protect from drying out while baking, or cut a circle of aluminum foil and place over the filling. Bake in a preheated 425 oven for 35 to 40 minutes. Cool before cutting or serve chilled. {230 calories per serving} SUGAR-FREE FILLING: Omit brown sugar. Spoon half the filling into the pie shell. Sprinkle with sugar substitute (equal to 6 tablespoons). Add remaining fruit filling. Cover filling with foil. Chocolate Chips, Oatmeal & Pecan Cookies
2 ½ sticks of butter, softened
¾ c brown sugar
½ c granulated sugar
1 ½ c flour
1 tsp vanilla
1 tsp baking soda
1 tsp salt
3 c oatmeal (old fashioned)
1 ½ c semi-sweet chocolate chips
¾ c pecans, chopped
Heat oven to 375°F. In large bowl, stir brown sugar and butter until blended. Stir in vanilla and egg until light and fluffy. Stir in oats, flour, baking soda and salt; stir in chocolate chips and nuts.
Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
Bake 10 to 12 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack. Makes 32 large cookies.
The Best Ever Peanut Better Oatmeal Cookies
1 ½ c flour
2 cups oatmeal
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 c butter
1 c peanut butter
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
Preheat oven to 350 degrees.
Mix first 5 ingredients.. In separate bowl mix peanut butter and butter until combined and creamy. Add sugars and blend. Adds 2 eggs and vanilla and blend. Gradually add dry ingredients to the wet and combine. Bake for 10-12 minutes. Makes 30 large cookies.
Pumpkin Cream Cheese Pie
Peach Cheesecake Squares
2 cups flour
½ c chopped pecans
½ c powdered sugar
2/3 butter, softened
2 blocks of cream cheese
½ c sugar
2 eggs
2/3 peach juice (I used the juice from the can of peaches)
1 can of peaches, in fruit juice (diced)
1 tsp vanilla
Preheat oven to 350 degrees
Cut butter into the first 2 ingredients. Press into a 9x12 casserole dish and bake until lightly brown. Beat the cream cheese until soft and fluffy. Add sugar and eggs and blend with mixer. Add peach juice, diced peaches and vanilla and mix. Pour over hot crust. Bake for 20 mins until the center is set.

Back porch Lemonade Pie
Combine 1
c milk (or 1/2 milk and 1/2 half n half)
and 1 (3.4oz) pkg lemon pudding and pie mix. Blend together well till thick.
In another bowl mix 2-8oz pkgs. softened, till whipped well.
Add 1 c frozen lemonade concentrate defrosted.
Add pudding mixture, lemonade concentrate, to cream cheese and mix well.
Pour into Graham cracker crust. Top with cool whip or real whipped cream and toss fresh strawberries on top.
Enjoy!!
