Veganism (from wikipedia)
Veganism /ˈviːɡənɪzəm/ is the practice of abstaining from the use of animal products, particularly in diet, as well as following an associated philosophy that rejects the commodity status of sentient animals. A follower of veganism is known as a vegan.
Distinctions are sometimes made between different categories of veganism. Dietary vegans (or strict vegetarians) refrain from consuming animal products, not only meat but, in contrast to ovo-lacto vegetarians, also eggs, dairy products and other animal-derived substances. The term ethical vegan is often applied to those who not only follow a vegan diet but extend the vegan philosophy into other areas of their lives and oppose the use of animals and animal products for any purpose.[4] Another term used is environmental veganism, which refers to the avoidance of animal products on the premise that the harvesting or industrial farming of animals is environmentally damaging and unsustainable.[5]
The term vegan was coined in 1944 by Donald Watson when he co-founded the Vegan Society in England, at first to mean non-dairy vegetarian and later to refer to the doctrine that man should live without exploiting animals.[6] Interest in veganism increased in the 2000s; commercially processed vegan food became increasingly available in supermarkets and restaurants in many countries and several top athletes in endurance sports, such as the Ironman triathlon and the ultramarathon, began to practise veganism and raw veganism.[7]
A 2009 research review indicated that vegan diets tend to be higher in dietary fibre, magnesium, folic acid, vitamin C, vitamin E, iron and phytochemicals and lower in calories, saturated fat, cholesterol, long-chain omega-3 fatty acids, vitamin D, calcium, zinc and vitamin B12.[8] Well-planned vegan diets appear to offer protection against certain degenerative conditions, including heart disease,[9] and are regarded as appropriate for all stages of the life-cycle by the American Dietetic Association, the Australian National Health and Medical Research Council and Dietitians of Canada.[10] Because uncontaminated plant foods do not provide vitamin B12 (which is produced by microorganisms such as bacteria), researchers agree that vegans should eat B12-fortified foods or take a supplement.[11]

3 Awesome Recipes With Zucchini!
Hello friends! In this video you will learn how to cook 3 awesome recipes from zucchini: Eggplant Casserole With Zucchini, Zucchini in cheese batter and Zucchini Roll With Bell Peppers, Cheese And Greens Filling.
1. Vegetable Stew Casserole (Eggplant (aubergine) casserole with Zucchini (Courgettes) and cheese is a delicious dish for lacto-ovo vegetarians (contains dairy products).
Ingredients:
- Vegetable oil - 2-3 tbsp.
- Garlic - 1-2 cloves
- Onions - 2 pcs.
- Carrot - 1 pc.
- Tomato juice - 1/2 cup
- Salt - 1/2 tsp (to taste)
- Marjoram - 1/2 tsp
- Black pepper - 1/3 tsp (to taste)
- Eggplants (aubergines) - 300g
- Mushrooms (champignons) - 150g
- Dill - 4-5 sprigs
- Zucchini (Courgettes) - 200g
- Cheese - 200g
Cooking:
Fry until cooked onions, garlic and carrots. Add tomato juice, salt and spices. Mix and simmer for 2-3 minutes. Put eggplants, mushrooms and courgettes, spread fried in tomato sauce vegetables and cheese. Bake at 180 ° C. for 35-45 min. Done! Bon Appetit!
2. Zucchini in cheese batter (zucchini baked with cheese) is a delicious dish for lacto-ovo vegetarians (contains eggs and dairy products).
Ingredients:
- Zucchini - 2 pcs (medium size)
- Salt - 1 tsp
- Black pepper - 1/3 tsp
- Curry - 1/3 tsp
- Asafoetida - 1/4 tsp
- Cheese - 150g
- Breadcrumbs - 4 tbsp
- Parsley - 1 bunch
- Ground red hot pepper - 1 pinch
- Eggs - 2 pcs.
Cooking:
Slice zucchini into large pieces. Add salt and seasoning. Mix well and leave for 5 minutes. Grate the cheese on a fine grater. Add breadcrumbs, pepper and herbs, mix. Whip eggs. Dip zucchini in flour, in eggs and then in cheese mass. Put on a baking sheet and bake for 20 minutes at 180 ° C. Done! Bon Appetit!
3. Zucchini roll stuffed with bell peppers, сheese and greens (zucchini roll baked in oven) is a delicious dish, which is suitable for vegetarians and vegans, subject to the use of vegetarian cheese.
Ingredients (for 2 rolls).
For the base:
- Zucchini - 1.5 kg
- Salt - 1 tsp
- Black pepper - 1/3 tsp
- Asafoetida - 1/4 tsp
- Curry - 1/3 tsp
- Flour - 3 tbsp.
For filling:
- Onion - 150 g.
- Carrots - 150 g.
- Sweet pepper - 100 g.
- Vegetable oil - 3 tbsp.
- Salt - 1/2 tsp
- Italian herbs - 1/3 tsp
- Hot peppers - to taste
- Parsley - 1 bunch
- Vegetarian cheese - 100g (or plain cheese)
Cooking:
Grate zucchini on a fine grater. Add salt, mix well and leave for 10 minutes. Drain and add flour and spices. Mix well. Put one half on a baking sheet. Spread into a rectangle approximately 3mm thick. Bake for 15 minutes at 180 ° C. Cut the onion into half rings. Grate the carrots. Sweet pepper (bell pepper) cut into strips. Fry the onion over medium heat until golden brown. Add carrots. Stew under a closed lid for 3-5 minutes, stirring occasionally. After 3-5 minutes, when the carrots become soft, add bell pepper. Add salt and spices. Simmer for another 2-3 minutes under the closed lid. After 3 minutes remove vegetables from the heat and cool down. Add the parsley and cheese to the cooled vegetables. Mix. Put the filling on the base and spread evenly. Form it into a roll. Cut into rings 3 cm thick. Done! Bon Appetit!
