Easy Hearty Comfort Food | Hamburger Rice Casserole
This hamburger rice casserole will be your new favorite comfort food. With the savory flavors of ground beef and cheese combined with the comforting aromas of rice and onions, this dish is hearty, filling, and delicious.

INGREDIENTS
1 pound lean ground beef, I used a 90-10% blend
2.2 ounces Lipton Beefy Onion Soup Mix,
21 ounces cream of mushroom soup
4 ounces sliced mushrooms, drained
2 cups beef broth
¾ cup whole milk
¾ cup sour cream
½ teaspoon salt
½ teaspoon black pepper
2 cups Minute Rice white rice
8 ounces Colby jack cheese, shredded
1½ tablespoons fresh parsley, chopped (optional garnish)
INSTRUCTIONS
Preheat oven to 350°F. Spray a 9×13 baking dish with nonstick cooking spray.
In a medium skillet on medium-high heat, brown the lean ground beef for 5 to 7 minutes or until no pink remains. Drain off the excess fat that was rendered from cooking.
To a large mixing bowl, add the browned and drained lean ground beef, packet of beefy onion soup mix, cream of mushroom soup, sliced mushrooms, beef broth, whole milk, sour cream, salt, and black pepper.
Stir to combine.
Stir in the minute rice and spread the mixture into the prepared baking dish.
Top the hamburger rice casserole with the shredded Colby jack cheese.
Tightly cover the casserole dish with a large piece of aluminum foil.
Bake for 45 minutes. Uncover the hamburger rice casserole and place it under the broiler for 2 to 3 minutes or just until the cheese is lightly browned and bubbly. Be sure to keep a close eye on the cheese so that it doesn’t burn while under the broiler.
Allow the hamburger rice casserole to cool for 5 minutes before garnishing with fresh chopped parsley and serving.

Ingredients:
½ lb spaghetti, torn into 3-inches long & uncooked
½ lb fresh mushrooms of your choice, sliced & sauteed
5½ cups chicken, beef, or vegetable broth
2 cups brown rice, uncooked
½ cup unsalted butter
8 oz water chestnuts, drained, sliced
1 tsp soy sauce
To Serve:
Roughly ⅛ tsp chopped parsley
1 tbsp parmesan cheese per serving

0:11 Preheat your oven to 350 degrees F.
0:14 Melt your butter in a deep skillet over medium heat. Add both your spaghetti and rice. Saute until both the spaghetti and rice are evenly coated, and both are just starting to caramelize.
0:35 Remove the heat, then add the remaining ingredients and mix to combine.
1:00 Transfer the entire contents of your deep skillet into a baking casserole of your choice and bake for roughly 45 minutes or until both the rice and spaghetti are cooked through.

5 tbsp prepared Marinara sauce
7 oz long grain rice, steamed
10½ oz potatoes, washed & peeled ????
1 cup milk ????
2 tbsp unsalted butter ????
1 tsp turmeric powder
Salt & ground black pepper, to taste
⅓ cup grated mozzarella cheese, plus more for sprinkling ????
⅓ cup grated cheddar cheese ????
To Serve:
Finely chopped fresh parsley
⬇️ How to make Mashed Potato and Rice Casserole ⬇️
0:07 Preheat your oven to 350 degrees Fahrenheit.
0:11 Prepare a stockpot & transfer your potatoes into it.
0:17 Pour water into the pot, enough to cover the potatoes.
0:23 Boil the potatoes until tender when poked with a tester, approximately 30 mins.
0:27 On a saucepot, combine milk, turmeric, & butter.
0:40 Bring mixture to a boil, or until the butter has melted. Set aside.
0:44 Drain the potatoes & discard the water.
0:51 Mash the warm potatoes using a masher or ricer, & transfer to a bowl.
0:59 Add both kinds of cheese together, & gradually with the milk mixture.
1:20 Fold until creamy & smooth.
1:34 Season the mashed potatoes to taste with salt & ground black pepper. Adjust accordingly. Set aside,
1:48 Layer the cooked rice into the bottom of a rectangular baking dish.
2:00 Spread the mashed potatoes on top of the rice, enough to cover.
2:06 Sprinkle mozzarella cheese around the baking dish, leaving a space in the middle.
2:13 Add the marinara sauce on the middle of the casserole & spread as necessary to cover the middle space.
2:14 Bake the casserole for about 10-15 minutes, or until cheese is golden brown in color & has melted.
