Persimmon Pudding in bain Marie
Large mold: 3 ½ hours steaming in bain Marie
Medium mold: 2 ½ hours steaming in bain Marie
This recipe calls for a large mold or large bundt mold. I like to use my bundt cake mold it works really well for this recipe. If you want to use a medium mold you can tweak the recipe using ½ or ¾ of the ingredients measured of what this recipe calls for. For example, instead of using 2 cups of flour use 1 cup of flour and so forth.
Wet ingredients
1 -1 ½ cup of pureed persimmon pulp
1 cup of butter
3 eggs
1 tbsp of lemon juice
2 tbsp of rum (can substitute with amaretto, dark tequila, or your favorite liquor that is on the sweet side)
2 tbsp vanilla
PLEASE NOTE: If you have persimmons that are not soft enough, then after peeling and removing any seeds, I would cut into slices and boil with brown sugar or regular white sugar, whatever you have on hand use a little water just enough to cover the persimmons in a small pot cover with lid, and boil until they are very soft and you can use a potato masher to mash them, leave the little water that is in there as long as it not a lot of water.
Dry ingredients
1 3/4 cups of flour
2 cups of sugar
2 tsp of baking soda
½ - 1 tsp cinnamon
½ tsp salt
Optional
½ - 1 cup walnut pieces
½ - 1 cup raisins
PREPARE BAIN MARIE AND PUDDING
Prepare steamer while you mix your wet and dry ingredients. After you have mixed your wet ingredients by either using a blender or cake mixer, I prefer using a blender. Then mix your dry ingredients in a separate bowl like you would normally do. Then combine dry and wet ingredients and mix with a balloon wire whisk or the cake mixer of your choice.
After your mixture is ready then prepare your mold by oiling it with cooking spray or use a paper towel and spread the oil in your mold. Pour the pudding mixture into the mold and cover with wax paper, I cut it to form the shape of the mold and since I am using a bundt mold, I cut a hole in the middle. Fold the wax paper in half and cut a half moon circle shape and cut the middle to get the hole that will fit into the bundt hole in the middle. Place the wax paper on top of the cake mix and cover with several layers of foil paper, you pinch all around the edges to fit tightly, you definitely do not water getting into your pudding. I get a rubber band to secure the foil paper to adhere tightly against the mold, as well, and I place a pot lid that I use to cover the mold. Some molds come with their proper lid as well, but you can use what you like. Then let it steam for 3 ½ hours for large bundt mold.
REMOVING MOLD FROM BAIN MARIE
Use your kitchen gloves so that you do not get burn while getting your mold in and out of the bain Marie. I’ve seen others tie a thick string around the mold and on top so that they use their tongs to place and remove the mold from the bain Marie. I have these thick kitchen gloves when placing and removing my mold from the bain Marie, and that seems to work really well for me, you can do what works better for you. After removing the pot lid let sit for 10 minutes, then remove the foil paper and peel wax paper off then let sit for 5 minutes, then use a butter knife and gently go inside around the cake and if you used a bundt cake mold like I did, then gently go inside around the bundt hole this is to separate the pudding cake from the mold, then get a plate of your choice, then place on top of the mold and turn over. You can serve with a dollop of whip cream, or make a sweet sauce over it, I’ve seen others serve it with melted dulce de leche, cajeta or caramel sauce.

INGREDIENTS (Serves 8-10):
Persimmon Upside-Down Cake
8 tablespoons unsalted butter
1 cup plus 2 tablespoons real maple syrup (grade B if you can get it, but grade A is fine as long as it's the real thing)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine table salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg at room temperature
1 large egg yolk at room temperature
2/3 cup buttermilk
1/2 cup finely chopped roasted pecans
2-3 ripe fuyu persimmons, cut into slices parallel to the equator, about 1/4-inch thick
Maple Cream
1 cup heavy whipping cream, well-chilled
2 tablespoons real maple syrup, well-chilled
1/8 teaspoon ground cinnamon

Persimmon Pudding
2 & 3/4 cup so flour
1 tsp baking soda
1/2 tsp baking powder
1 & 3/4 cup sugar
1 cup buttermilk
1 T vanilla
2 eggs
1 stick melted butter
3 cups persimmon pulp
325° for 1.5 hours
