1/2 - 1 tsp cayenne powder (remember this is spicy)
2 tsps brown sugar

1 tbsps minced onion
1 cup tomato sauce (add more for a more saucy mixture if you desire)
1 cup beef broth
2 tsps brown sugar (added off camera just to balance the flavour because of the acidity of the tomato sauce)

Chilis skillet queso is so easy to make. You can make this copycat recipe for Chili's Skillet Queso. You can make this recipe with a can of chili and Velveeta cheese. This makes the perfect dip for any occasion.

party that tastes like it came from a restaurant? Chilis Skillet Queso is
just for you.
Now it only has two ingredients in it, and the first one is chili, and I am
using chili with no beans. Because I live in Texas, and I don't think they
sell chili with beans in the store, or actually they do, but no beans. You
can add beans if you want, I know it's very controversial. And the next
ingredient is also controversial, Velveeta cheese.
All right. So we're going to take a pot here, we're going to put it over
medium heat. We are going to take one can of chili, I really like Hormel
just because, I don't know, grew up on it, tastes great. No, actually it
taste to me just like chilis, so Hormel chili here. So one 14 ounce can of
chili to one pond of Velveeta. If you need more, two cans of Hormel chili
with two ponds of Velveeta.
Now I kind of cube it up to help it melt better, and I do this over the
stove top, just because I hate to microwave food, because you know what,
it's hot in one spot and you have to stir it and spread the heat around.
You know what, it only takes about three to five minutes to make it on the
stove top, and here everything melts evenly, so that's just my push to do
it on the stove top. If not, microwave 30 seconds, stir, microwave 30
seconds, stir, and cook it until you're happy with it. So this is really
easy to make. You know what, I feel like a little spicy, you could add some
jalapenos in here, whatever makes you happy. And here you go, you have some

For the Wet Rub: (combine ingredients and rub onto steak, let sit for 30-60 minutes or more in the fridge)
- 1/3 Cup Olive Oil
- 1.5 tablespoons Minced Garlic
- 1 teaspoon Onion Powder
- 1 tablespoon course Black Pepper
- 1.5 tablespoons Lime Juice
- 1/3 cup fresh chopped Cilantro
- 1 oz. El Yucateco Red
For the Nachos:
- Tortilla Chips
- 2 cups sharp Cheddar Cheese (shredded)
- 2 cups white Queso Cheese (shredded)
- 1 can Refried Beans (heat and add small amount of water to thin)
- 1 Lb Skirt Steak
- Chopped Green Onion
- Chopped Cilantro
- Jalapenos (optional) I subbed these out for more dashes of El Yucateco on top!
- Sour Cream (topping)
- Guacamole (topping)
- Pico De Gallo (topping)
Instructions:
Always wash your hands before prepping any food recipe!
Make wet rub, apply to steak and let sit in fridge for 30-60 minutes or more (the longer the better). Pre-heat your grill to 500 degrees Fahrenheit and cook the skirt steak until done (med-well is preferred for nachos). Slice and cube the steak to prepare for the nachos. Build nachos in a pre-oiled cast iron skillet with ingredients as shown in video or to your preference. Place in grill or smoker (can also be done in oven) at 300 degrees until everything is melted nicely! Remove from heat, place toppings of your choice in middle and garnish with green onion and cilantro! Add a few dashed of your favorite El Yucateco Sauce and DIG IN! ENJOY!

Here is how I make this classic recipe. Be sure to buy 2 can of rotel or the dip will be too thick. Enjoy!
RECIPE:
INGREDIENTS:
1 lb. ground beef
16 oz. Velveeta cheese this is the smaller box
20 oz. Rotel® diced Tomatoes with & Green Chiles (TWO 10-oz. cans) DO NOT DRAIN
2 tsp. chili powder
¼ tsp. garlic powder
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
Set a large skillet over medium high heat on the stove top. Brown and crumble the ground beef, drain the fat.
Add the cooked ground beef to the slow cooker, cube the velveeta and add on top of the beef.
Pour over the can of rotel and sprinkle over the chili and garlic powder. Stir.
Place the lid on the slow cooker. Cook on HIGH for 2 hours or until cheese is melted and the dip is hot.
Keep on warm while serving.
