1 lb Flour
1 ts Mixed spice
4 oz Lard
4 oz Currants
Milk 1 ts Baking powder
4 oz Margarine
6 oz Castor sugar
2 Egg
Sift the flour, baking powder, and mixed spice; rub in the margarine and lard; add the sugar, currants and beaten egg. Mix in milk to make a stiff dough and roll out 1/4" thick. Welsh cakes also bakestones or pics, are traditional in Wales.They have been popular since the late 19th century with the addition of fat, sugar and dried fruit to a longer standing recipe for flat-bread baked on a griddle.
The cakes are also known as griddle cakes or bakestones within Wales because they are traditionally cooked on a bakestone a cast-iron griddle about ½ (1.5 cm) or more thick which is placed on the fire or cooker; on rare occasions, people may refer to them as griddle scones.
Welsh cakes are made from flour, butter/lard, currants, eggs, milk, and spices such as cinnamon and nutmeg. They are roughly circular, a few inches (7–8 cm)[citation needed] in diameter and about half an inch (1–1.5 cm) thick.
Welsh cakes are served hot or cold, sometimes dusted with caster sugar. Unlike scones, they are not usually eaten with an accompaniment, though they are sometimes sold ready split and spread with jam, and they are sometimes buttered.

You can find the recipe pinned in the comments. We recently got back from a trip to the UK, and I was inspired to make these. I like to use an electric skillet for better temperature control and for a larger surface area.

How to Make Welsh Cakes

One of our friends had the sweetest grandmother, and when we would visit there would always be Welsh cakes on the table with tea. She was kind enough to hand write this recipe for us, and it has become a favourite around our house. So follow along with the recipe video as we make Welsh cakes.
(or: picau ar y maen, pice bach, cacen gri, teisen radell, bakestones)
Ingredients:
2 cups all purpose four
4 oz butter
3/4 cup sugar
1/2 cup currants
1 or 2 eggs
milk if needed
1/4 tsp allspice
1/2 tsp baking powder
Method:
Rub fat and flour together until quite fine.
Add sugar, currants, spice and baking powder.
Add eggs and enough milk to make a soft dough.
Roll out on a floured surface, to a thickness of 1/8.
Cut into rounds.
Set electric frying pan to 350 degrees or if using a stovetop frying pan cook over medium.
Spread a bit of melted butter over the surface of the pan.
Place the cookie rounds into the pan.
Cook until the tops look like they are starting to dry out then flip the cookies and continue cooking until a light golden colour.
Remove from pan to cooling rack and sprinkle with white sugar or fruit sugar.
