1 lb Flour
1 ts Mixed spice
4 oz Lard
4 oz Currants
Milk 1 ts Baking powder
4 oz Margarine
6 oz Castor sugar
2 Egg
Sift the flour, baking powder, and mixed spice; rub in the margarine and lard; add the sugar, currants and beaten egg. Mix in milk to make a stiff dough and roll out 1/4" thick. I completely adore Welsh cakes and love this modern spin on them, filled with homemade strawberry jam. A taste from home and a treat that I make every year for March 1st to commemorate St David's Day. I am originally from Wales and love to make Welsh cakes throughout the year and thought I would share this easy dairy free Jam Splits recipe with you. Welsh cakes are also known as pice bach and are usually baked either on a griddle or bakestone. They are so delicious when they are fresh off the griddle and dusted with sugar. And even better when you cut them in half and spread homemade jam on them. You seriously need to try these.

Mini Welsh Cakes | Happy St David's Day!
I couldn't resist making up a batch of dairy free mini Welsh cakes today seen as it's St David's Day in Wales. We're a Welsh Canadian family and I love to make traditional treats that remind us of our heritage.
To make these, you'll need:
225 grams self raising flour
100 grams butter (I used plant based)
50 grams white sugar
1 egg (sub with 50 g apple sauce if you're vegan)
2 tbsp milk (I used almond)

How to Make Welsh Cakes anytime of the year!

Ingredients
3 cups all purpose flour + 1/3 cup for rolling dough out onto surface
1 cup granulated sugar + 2 Tbsp for dusting
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon nutmeg (mace in Wales)
16 TBSP cold unsalted butter cubed
3/4 to 1 cup currants (sultanas in Wales)
2 large eggs beaten with enough milk to yield between 2/3 & 3/4 cups measured liquid in measuring cup.
Directions:
Using a medium-sized mixing bowl, whisk together flour, sugar, baking powder, salt, & nutmeg
Work in the butter until the mixture is fairly crumbly; a few larger pieces of butter are OK. can Next mix in currants. Then add milk & egg mixture , mixing until everything is moistened.
1 Dough will be sticky out onto a well-floured work surface, and divide it in half. Shape each half into a thick, 4 to 5 disc. Cover one of the discs with plastic, and refrigerate for next time. Will keep 5 days in the refrigerator.
2 Roll soft dough into a 9 1/2 circle; it should be about 1/4 thick. Turn dough over to re-flour cutting board surface and roll gently one more time.
3 Using a 2 1/2 to 3 1/2 biscuit or other round cutter, cut the dough into circles. Yes scraps of dough will remain re-roll these and cut again, until you've used dough.
4 Heat an un-greased skillet over low-medium heat; an electric frying pan or skillet, set at 325°F, works well here. Dry frying Welsh Cakes is the preferred method of cooking. Two minutes each side generally render
s the Golden Brown which ultimately defines Welsh Cakes.

Welsh Cakes on the Simmer Plate
To celebrate St David's Day, we asked Claire Thomson to show us how to make Welsh Cakes on the simmer plate of the Everhot! Our simmer plate was set to 200 degrees. You will need:
225g plain flour, plus extra for dusting
85g caster sugar, plus extra to dust
1 tsp ground mixed spice
1½ tsp baking powder
50g cold diced butter
50g cold diced lard
50g currants
1 egg, beaten with a splash of milk, about 1tbsp
Method:
1. In a mixing bowl rub the flour, sugar and spice together with the fats to form fine breadcrumbs.
2. Add the currants and mix to combine.
3. Add the beaten egg and milk to the bowl and swiftly combine to form a cohesive dough.
4. Dust the worktop with a little extra flour and roll the dough out approximately 1½ cm thick. Cut discs from the dough, I used a 5cm fluted cutter. Re roll any trim.
5. Use a piece of kitchen paper dabbed with a little neutral cooking oil and smear over the simmer plate carefully.
6. Add the Welsh cakes direct to the simmer plate and cook for around 3-4 minutes on each side, flipping carefully each time, until nicely coloured on both sides.
7. Remove from the heat and drench with a little extra caster sugar whilst still hot. Serve warm or cold.
