lightly beaten 1/3 Cup Sugar 1 Cup Semisweet Chocolate Chips -- (6 ounces) Mix cake according to pkg. directions. Spoon batter into 24 greased or paper-lined muffin cups, filling two-thirds full. In a mixing bowl, beat cream cheese, egg and sugar until smooth. Fold in the chips. Drop by tablespoonfuls into batter. Bake at 350 F. for 20 minutes or until cupcakes test done. Recipe: (Adapted from:
1/2 cup cocoa powder 3/4 cup plain flour 1/2 tsp baking soda 3/4 tsp baking powder 2 eggs 1/2 cup brown and white sugar 1 tsp vanilla extract 1/3 cup vegetable/canola oil
Buttercream frosting: 1/2 cup softened butter 2 cups icing sugar 1 tsp vanilla extract Squeeze of lemon juice (balance out the sweetness) Pinch of salt 1 tbsp milk
