Recipe :
Picnic Recipes for Kids
Chocolate Peanut Butter Banana Sushi Roll
Preparation Time: 15 minutes
Ingredients:
1 soft tortilla or Roti
1 tbsp creamy Chocolate Peanut Butter
1 ripe Banana
Spread the peanut butter evenly across one side of the tortilla.
Place the banana at the edge of the tortilla on top of the side that is spread with peanut butter.
Tightly roll the banana up inside the tortilla.
Use a sharp knife to cut the roll into individual banana sushi pieces.
Grilled Chicken and Cheese Sandwich
Preparation Time: 15 minutes
Cooking time: 10 minutes
Ingredients:
2 chicken breasts, boiled and shredded
1 tsp garlic powder
½ tsp paprika
¼ cup mayonnaise
100g cheese spread
8 slices sandwich bread
4 cheese slices butter to brush.
Method:
Combine the chicken, garlic powder, cayenne pepper, paprika, cheese spread, mayonnaise together in a large bowl;
Divide the mixtures into 4 servings, and then spread the cheese mixture on one side of a piece of bread, cover with cheese slice.
Sandwich the bread together and coat the outside lightly with butter, then place onto the samosa maker.
Grill for 2 minutes on each side. Serve.
Pizza Pinwheels
Preparation Time:45 minutes
Cooking Time: 20 minutes
Ingredients:
1 cup warm water
1 tbsp yeast
1 tbsp sugar
1 tbsp oil
1 tsp salt
2 1/2- 3 cups flour
1 1/2 cups pizza sauce
2 shredded mozzarella cheese
2 cups pizza toppings of choice
Method:
Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up.
Add in oil, salt and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl.
Continue mixing for an additional 3-4 minutes.
Cover with plastic wrap and let sit in a warm place for 30 minutes.
Dust counter top with flour and roll dough out into a large rectangle about 1/4 thick.
Top with pizza sauce and spread to coat dough. Sprinkle with 1 cup of cheese. Add pizza toppings.
Top with another 1 cup of cheese.
Starting with one of the long sides of the rectangle, roll dough up tightly, pinching the seams to close at the end. Use a sharp, thin knife to cut 1 1/2 sections of dough from the large roll. This will result in about 15 pinwheels.
Preheat oven to 200C for 10 minutes.
Set pinwheels on a large greased baking sheet. Bake for 12-14 minutes. Remove from oven and top with remaining 1/2 cup mozzarella cheese. Return to oven for an additional 1-2 minutes, until cheese is melted and rolls are just beginning to turn golden brown.
Serve.
Fruit Salad Jars
Preparation Time: 30 minutes
Ingredients:
1 tin pineapple
2 apples
2 kiwis
2 oranges
2 cups grapes
1 cup berries of choice
2 tbsp lemon juice
2 tbsp honey
Method:
Cut all fruits into dices. Drain pineapple titi bits from the tin.
Put together all ingredients in a large bowl.
Prepare the dressing by mixing the honey, lemon juice. Pour over the fruits. Mix. Divide into 4 jars. Close lid tightly and refrigerate till required.
