How To make Pig Lickin' Cake
Ingredients
1
each
butter cake mix, package
4
each
eggs
3/4
cup
oil
1
cup
mandarin oranges, with juice (11 oz can)
1
teaspoon
vanilla
Topping:
1
each
vanilla pudding mix, instant (5 oz package)
1/2
cup
powdered sugar
1
each
pineapple, crushed, (14 oz can), and juice
1
each
cool whip (9 oz carton)
Directions:
Beat cake mix, eggs, oil and juice from oranges and vanilla. Then add oranges and beat until pieces are small, about 3 minutes. Bake in greased and floured 9x13 inch pan at 350 degrees for 25 to 30 minutes.
To make topping: Blend juice from pineapple with the pudding mix. Add powdered sugar, Cool Whip and drained pineapple. Blend well after each. Spread on cake and refrigerate.
Called pig licking cake because people make pigs of themselves.

This cake is called by 3 different names....Mandarin Orange Cake, Pea Pickin' Good Cake, and Pig Pickin' Good Cake. It really doesn't matter what it's called as long as you know that it is DELICIOUS! I did some research to find out why it would be called Pig Pickin' Cake and found that it got the name because it was very common at pig roasts and barbecues in the south. Guest picked the tender meat off the cook pig, which is how a Southern barbecue became known as a pig pickin'. This mandarin orange cake became a regular on the dessert table of most of these pig roasts and thus became a Pig Pickin' Good Cake. I'm glad I found this bit of history behind the name of the cake. You decide what you want to call it, but I am sure you will want to make it again and again.

Pig Lickin Cake Recipe
Cake: 9x13 pan
One box yellow cake mix
Follow directions on the back but replace the one cup of water with a can of mandarin oranges.
Bake 350 for 20-30 minutes.
Whip topping:
One big thing of cool whip
1 small box Vanilla instant pudding mix
1 can Crushed pineapple
Refrigerate for 6-12 hours before serving.
Enjoy!
This cake does need to stay in the refrigerator after each serving.

Hey Y’all I hope y’all enjoy this recipe, it’s another crowd pleaser.
My Father in law would have me make this for his birthday every year. He is no longer with us here on this earth in body, but I cannot make this without thinking of him. It puts a smile on my face each time I make it thinking of all the times this cake brought a smile to his. I hope it brings a smile to someone special in your lives.
Pea Pickin Cake Ingredients:????
Pre heat oven to 350 degrees
1 box yellow cake mix
4 eggs room temp ( I used 4 because the recipe called for 4 but honestly y’all can use 3 and save yourself an ????and it will be just fine)
1 stick room temp butter (your choice of brand)
1 11oz can mandarin oranges in juice
Mix ingredients together and place in 2 8 inch round cake pans or 13x9 rectangle baking dish for single layer sheet cake if you prefer. Bake for about 20 minutes or until tooth pick inserted comes out clean. Ovens do vary.
FROSTING :
1 12 oz container cool whip????
1 box large vanilla instant pudding
1 20 oz can crushed pineapple with the juice
(I add pineapple last)
I place my cake in the fridge so it is cool before I frost with the cool whip frosting
Note: I also save just a little of the mandarin orange juice so I can poke holes in the cake while it’s cooling for extra moisture. I would not add to much though or you will have a soggy cake:
