How To make Pignoli Biscotti
2/3 c Pinoli
9 tb Unsalted & softened butter
1 c Sugar
2 Eggs
3 ts Vanilla extract
2 1/2 c Flour
2 ts Baking powder
1. Preheat oven to 350 degrees.
2. Toast pignoli in a baking pan for 5 minutes.
3. Let cool and chop them; reduce the oven to 325 degrees.
4. Cream butter with sugar, add eggs and mix well.
5. Add the vanilla.
6. In another bowl mix together flour and baking powder.
7. Add to the butter mixture with the chopped pignoli.
8. Mix until combined.
9. Roll the dough into cylinders about 1 1/2" wide and 12" long.
10. Place them on baking sheet and bake for about 25 minutes.
11. Remove from oven and cool for 5 minutes.
12. Slice the cookies abut 1/2" on the wide diagonal.
13. Return them to the baking sheet, then cut surfaces down.
14. Bake for 5 to 10 minutes until tops are lightly brown.
15. Let cool and store in air tight container.

Ingredients:
12oz almond paste
1/2C granulated sugar
1C powdered sugar
4 large egg whites
1.5C pine nuts
1. Prehead oven to 325
2. Pulverize almond paste and granulated sugar in food processor
3. Add powdered sugar and pulse
4. Add two egg whites and blend well
5. Crack the other two egg whites in a bowl
6. Pour pine nuts into a bowl
7. With lightly floured hands, make 1 balls of the dough
8. Roll in egg wash then roll in pine nuts
9. Place on cookie sheet
10. Smush the cookie balls gently
11. Cook for 12-15 minutes until lightly browned.

Almond Anise Biscotti (Greek Paximadakia)

4 ounces unsalted butter, softened
1 cup granulated sugar (plus more for garnish)
3 eggs, at room temperature
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
1/4 teaspoon salt
3 cups (450 grams) all-purpose flour
1 teaspoon baking powder
1 cup toasted coarsely ground almonds
1-2 tablespoons anise seeds
Preheat the oven to 350 °F, 180 °C.
Beat the butter with the sugar, salt, almond and vanilla extracts. Beat over medium-high speed until fluffy.
Combine the flour, baking powder, nuts, and anise seeds in a large bowl and mix together.
Add the eggs to the mixer one at a time and beat until combined and fluffy.
Add the flour mixture slowly until incorporated and a dough is formed.
Divide the dough into 2 equal portions and form them into logs (about 1/2 inch thick).
Transfer the logs onto a half sheet baking (13 by 18 inch) tray that has been lined with parchment paper. Sprinkle the tops of the logs with granulated sugar and lightly press the sugar into them.
Bake on the center rack for about 25 minutes until pale golden and the center of the loaves is firm.
Set them aside to cool.
Slice the loaves into about 1/2-inch thick slices cut on the diagonal.
Place the slices onto the baking tray and bake (325°F) for about 15 minutes.
Cool completely and store the cookies in an airtight container.
Serve with Greek coffee and enjoy!
