How To make Pineapple Pound Cake
1/2 c Butter or shortening
3 lg Eggs
1/2 c Unsweetened frozen pineapple
Juice concentrate, thawed 1/2 c Water
2 1/2 c White flour
1 ts Baking soda
1 ts Baking powder
In a large mixing bowl beat together butter (or shortening), eggs, pineapple juice concentrate, and water until thoroughly blended. Add flour, baking soda, and baking powder; beat just until blended.
Spoon mixture evening into a 9" x 5" oiled and floured loaf pan. Bake in a preheated oven at 350 degrees for 45 minutes or until knife inserted comes out clean. Cool on a wire rack.

Cake Recipe
3 sticks unsalted butter at room temp
8 oz cream cheese at room temp
6 eggs at room temp
3 cups granulated sugar
1 tbs vanilla extract
1 tbs crème bouquet
3 cups cake flour
1 tsp baking powder
1/4 tsp sea salt
20 oz can crushed pineapple in heavy syrup (drained)
Pineapple Sauce
20 oz can crushed pineapple in juice
1/2 cup granulated sugar
2 tbs corn starch
1 tbs vanilla extract
Glaze
1 1/2 cups powdered sugar
Splash of vanilla extract
About 2 tbs pineapple juice

Ingredients
Bake cake for 1 hour & 15 min @ 325 (Make sure cake is on the center rack)
3 cups of flour (sifted)
I use 2 cups of WhiteLily Self Rising & 1 cup of Softassilk cake flour
2 sticks of salted butter (Land o Lakes)
2 cups of sugar
1 cup of buttermilk
6 eggs
1 egg yolk (Best to use a cold egg for seperation)
1 tsp baking powder
2 tbsp of vanilla extract
1/2 cup Crisco shortening
1 cup crushed pineapples
Icing
2 cups of confectioners sugar
2 tbsp butter
Pineapple juice
2 tbsp crushed Pineapples
