How To make Pistachio Whiskey Cake
1 pk Vanilla cake mix
Eggs Vegetable oil 1/2 c Water
3/4 c Whiskey
1 pk Instant pistachio pudding
=- 1 serving size 1 c Maraschino cherries, chopped
1 c Walnuts; chopped
2 c Chocolate chips
Prepare cake mix as directed on package, use recommended amount ofeggs and oil but 1/2 c water and 3/4 c whiskey for the liquid. Blend inthe pudding mix, then fold in the cherries, walnuts and chocolate chips. Bake in greased and floured Bundt pan for 50 to 60 minutes at 350 degrees. Let cool before adding glaze. -----

Pistachio Raspberry Tiramisu (Valentine's Special!)
Valentine's Day is right around the corner, and I wanted to give you all an easy recipe to make for your loved ones that delivers big on flavour. So say hello to my Pistachio Raspberry Tiramisu :D
Layers of Earl Grey soaked lady fingers, pistachio cream, and raspberries come together to make an incredible tiramisu. The best part is that it only takes 15 minutes to prep!

INGREDIENTS
1.5 cups, hot water
3, Earl Grey tea bags
1/3 cup, pistachios
3 large eggs, separated into yolks and whites
1/2 cup, sugar
1 cup, mascarpone
1 cup, raspberries
12 savoiardi biscuits (lady finger biscuits)
Cocoa for dusting
Slivered pistachio
4 whiskey glasses
METHOD
Place tea bags in hot water and allow to steep for 5 minutes. Remove tea bags and allow tea to completely cool.
Place pistachios in a small food processor and pulverize until fine in texture.
In a bowl, whisk egg whites until stiff peaks form.
In another bowl, add sugar to egg yolks and whisk until pale, fluffy, and voluminous. Then whisk in ground pistachios followed by the mascarpone.
Add the egg whites in quarters to the mascarpone mixture and gently fold to incorporate. The resulting mixture should be voluminous, light and fluffy.
Each glass will require 3 biscuits. Split each biscuit in half so that there are 6 pieces in all.
Dip 2 of these pieces quickly in the tea, and layer at the bottom of the glass. Top with a generous dollop of pistachio cream, and arrange raspberries on top so that they cover the surface of the cream.
Quickly dip a couple of more pieces of biscuit and layer on top followed by more pistachio cream. Lastly repeat this process one more time, and overfill your glass with the pistachio cream. Using a bench scraper/pastry knife, scrape off the excess cream so that a clean smooth top forms.
Dust with cocoa until completely covered and garnish with slices raspberries and pistachio slivers.
Refrigerate for a minimum of 3-4 hours to allow cookies to soften. Enjoy! :)

Christmas Cake Recipe - Easy Fruit Cake that's beautifully moist!
An easy Christmas cake that turns out perfect every time. No creaming, beating or soaking of fruit required! Plus tips on storage and feeding your Christmas cake.
Feeding your fruit cake in the weeks leading up to Christmas helps to build and intensify the flavour of the cake, and will ensure it's beautifully moist.
Oven Temp:
Bake in the oven at 150C/300F (fan) for 45 minutes, then 140C/275F (fan) for a further 60-75 minutes - until an inserted skewer comes out clean.
Alcohol-free Christmas Cake:
For a non-alcoholic version, you can replace the alcohol with cold tea, fresh orange or apple juice.
You can then feed the cake with either:
1. Cold tea
2. Fresh orange or apple juice
3. Ginger cordial mixed with water (2 tsp mixed with 2 tbsp water)
4. Rum flavouring mixed with water (⅛ tsp mixed with 2 tbsp water).
If you do this, don’t make the cake any earlier than November, as juice (as opposed to alcohol) could start tasting funny after more than a couple of months.

3/4 cup (175g) unsalted butter, chopped
1 packed cup (210g) light brown muscavado sugar
2 + 2/3 cups (400g) mixed dried fruit
1 cup (200g) glacé cherries roughly chopped
1 cup (100g) dried cranberries
Zest and juice of 1 orange
Zest of 1 lemon
1/2 cup (120ml) cherry brandy
1/2 cup (85g) ground almonds (coarsely ground - not the type that is like flour)
3 large eggs lightly whisked
1 + 2/3 cup (200g) plain/all-purpose flour
½ tsp baking powder
1 tsp ground mixed spice
1 tsp ground cinnamon
¼ tsp ground allspice
To feed the Christmas cake:
Cherry brandy (1-2 tbsp per week)
