Ingredients
1/2 cup unsalted butter softened (113g)
8 oz cream cheese softened (225g)
1 cup light brown sugar tightly packed (200g)
1/2 cup granulated sugar (100g)
2 large eggs
1 1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour (335g)
2 teaspoons baking powder
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 cup buttermilk (120ml)
Cinnamon Swirl
1/4 cup sugar (50g)
1 1/2 teaspoon cinnamon
Streusel Topping
1 1/3 cup all-purpose flour (175g)
1 cup + 2 Tbsp brown sugar packed (225g)
3 Tablespoons granulated sugar
4 1/2 teaspoons cinnamon
1/4 teaspoon salt
10 Tablespoons unsalted butter melted (140g)
Glaze (optional)
1/2 cup powdered sugar (65g)
2-3 teaspoons milk
Instructions
00:00 Introduction
00:12 Preheat oven to 350F and lightly grease and flour a 13x9 baking pan.
00:20 In stand mixer, or using an electric mixer in large bowl, cream together butter and cream cheese.
00:43 Beat in sugars until light and fluffy.
00:56 Add eggs, one at a time, beating until combined. Scrape down sides and bottom of mixing bowl with rubber spatula.
Stir in vanilla extract.
01:09 In a separate, medium-sized bowl, whisk together flour, baking powder, cornstarch and salt.
01:33 Gradually add flour mixture to wet ingredients, alternating with buttermilk, until all of the flour mixture and buttermilk have been combined.
02:25 Spread about half of the batter into prepared pan (batter will be thick).
02:33 Quickly whisk together sugar and cinnamon for cinnamon ripple layer in a small bowl and sprinkle it evenly over the batter.
02:55 Dollop remaining batter over the cinnamon sugar layer and use a knife to spread evenly overtop. It's OK if you end up disturbing the cinnamon sugar layer a bit, it will be a nice swirl when it bakes. Prepare your streusel topping.
Streusel
03:10 Melt butter in a medium-sized bowl on 10 second increments (stirring between) until just melted (you don't want it to be too hot, if it does get too hot allow to cool.
03:21 Use a fork to whisk together your flour, sugars, cinnamon, and salt. Pour melted butter over mixture and use a fork to stir until combined (mixture should be crumbly).
03:54 Sprinkle streusel evenly over batter.
04:03 Bake on 350F for 40-50 minutes (check doneness with a toothpick inserted in center).
Allow to cool before cutting and serving.
Glaze (optional)

Base dough:
550 g Cake flour
1 tbsp Powdered sugar
1 Egg
1 tsp Salt,
50ml of Neutral-tasting oil
8g of Yeast
350ml of Whole milk
Filling:
1 kg of Plums (i used 7 pieces)
1-2 tsp of ground cinnamon
4 tbsp Brown sugar(you can use normal sugar if you want to)
The topping: (Streusel)
150 g Cake flour
100g Granulated sugar
125g Unsalted butter
Oven temperature 180 °C
Baking time 35 minutes

This plum crumble cake is the perfect dessert for family dinners and holidays. It's pretty easy to make, balanced in flavors, it’s not to sweet, and the most important thing, it goes wonderfully with a cup of tea or coffee.

For the filling:
500 Plums
Lemon zest
3 tablespoons (37g) Brown/white Sugar
30g Cornstarch
For the crumble:
1¼ (125g) Rolled oats
1 cup (125g) Plain flour or whole wheat flour
1/2 cup (115g) Butter, softened
1/4 cup (50g) Brown/white sugar
1 teaspoon Baking powder
Pinch Salt
Directions:
1. Preheat oven to 180C (350F). Line the bottom and the sides of a 8-inch (20cm) round cake pan with parchment paper.
2. Prepare the filling: cut the plums in half, remove the pit, then cut each half into 3-4 pieces. Transfer the plums into a large bowl and add sugar, lemon zest and cornstarch. Mix well and set aside.
3. Make the crumble: in a large bowl, mix oats, flour, salt, sugar and baking powder. Add softened butter and rub with your fingertips until the mixture resembles crumbs.
4. Assemble the cake: spread half of the crumble on the bottom of the pan. Using a spoon or the bottom of a glass, press evenly the mixture. Them spread the filling on top of the crust. And sprinkle the remaining half of the crumble on top.
5. Bake for 30-35 minutes.
6. Release from the pan and serve with vanilla ice cream.

START BY MAKING THE STREUSEL..
IN A BOWL ADD THE FLOUR,SUGAR,CINNAMON,SALT AND THE BUTTER..
RUB THE INGREDIENTS TOGETHER USING THE TIPS OF YOUR FINGERS UNTIL THE MIXTURE IS CRUMBLY..
SET ASIDE..
CUT IN HALF AS SHOWN IN THE VIDEO THE PLUMS AND SET ASIDE..
IN A BOWL BEAT UNTIL CREAMY BUTTER AND SUGAR..
ADD THE EGGS AND THE LEMON ZEST AND BEAT UNTIL WELL INCORPORATED..
ADD THE FLOUR AND THE BAKING POWDER AND MIX UNTIL WELL INCORTPORATED.
SWITCH TO A SPATULA AND CHECK IF EVERYTHING IS WELL COMBINED..
GREASE AND FLOUR A BAKING PAN AND TRANSFER THE CAKE MIXTURE INTO THE BAKING PAN..
SPREAD EVENLY AND PLACE THE PLUMS OVER THE CAKE MIXTURE..
SPRINKLE WITH BROWN SUGAR AND COVER THE PLUMS WITH THE STREUSEL..
BAKE IT IN A PREHEATED OVEN AT 175C/347F FOR 40 MINUTES OR UNTIL A TOOTHPICK COMES OUT CLEAN..
LET IT SIT IN THE PAN FOR 10 MINUTES
LET IT COOL COMPLETELY ON A WIRE RACK..
