How To make Plum Streusel Coffee Cake
StrEUSEL:
3/4 c Brown sugar, firmly packed
3 tb All-purpose flour
2 ts Cinnamon
1/2 ts Salt
3 tb Softened butter
1/2 c Chopped walnuts
BATTER:
16 Halved & pitted, plums
1/4 c Granulated white sugar
-for coating plums 1/2 ts Salt
2 ts Baking powder
2 c Sifted all-purpose flour
3/4 c Granulated white sugar
1/4 c Soft shortening
1 Egg, beaten
1/2 c Milk
Streusel: Mix all ingredients together, well. Batter: Gently mix plum halves with 1/4 cup sugar until fruit is evenly coated. Combine the sifted flour, baking powder, sugar and salt. Sift into mixing bowl. Cut shortening into dry ingredients with pastry blender. Add egg, beaten until thick and lemon colored. Combine with milk. Stir just until dry ingredients are moistened. Spread half of batter into buttered 9x9x2" baking dish. Sprinkle with half the streusel mixture. Distribute 16 plum halves evenly over the surface, spread remaining batter over the plum halves; cover with the remainder of the streusel mixture and top with the remaining plum halves. Bake in a 350 degree over until done, about 50 minutes. Yield 16 generous squares. Wrap any leftover coffee cake in foil to keep fresh for eating cold or heated the next day.

Hi lovelies, I know, I know, it was a plum cake last time and it is another plum cake today, but you know what? It had to be done! This cake is so amazing I just couldn´t wait to share it with you. It is super suuuuper soft and has so many juicy plums in it, not forgetting that crunchy crumble topping. If you would ask me, I would say this is the real coffee cake perfection! :) Give it a go and you will fall in love! :)

Plum Streusel Cake
This plum streusel cake is delicious and perfect with a cup of tea or coffee. Made with fresh plums and a crumbly topping, this cake can easily become a family favorite!
Recipe: Simple German Streusel Plum Cake
This is a simple German recipe for plum cake. Such a great fall classic.
Easy German Plum Cake with Streusel:
750g of fresh plums. Small ones are best.
4 cups (500g) flour
1 cup (250g) butter
1 cup (200g) sugar
1 egg
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 tsp cinnamon
1/4 tsp salt
Cut plums in half and remove pits. Melt butter. Combine all dry ingredients. Add melted butter and egg. Mix or knead together until all the flour is moist with butter. You should be able to press the dough together with your hands and have it stick together. Press 2/3 of the dough into the bottom of a large baking pan. I used a 10 inch round cake pan. Smaller won't work with this recipe. Place as many plums as you can fit onto the dough. Sprinkle the rest of the dough onto the top of the plums. Bake at 200°C or 400°F for 40-50 minutes.

Fresh Plums look so pretty sitting on top of a cake. You may think that plums, when cut in half, would dry out during baking but the opposite is true. A little sugar sprinkled on the top of the plums, along with the heat from the oven, causes the plums to soften and their juices to be released. So by the end of the baking time they have become wonderfully soft and almost jam-like with nicely caramelized edges. And the cake. Well, this cake is deliciously flavorful, and no electric mixer is needed to make the batter.
