Pollo Asado Mariposa – Mexican Spatchcock Chicken
4 oz Anchiote Paste
1 bunch of cilantro
3 roma tomatoes
½ onion
2-3 garlic cloves
2 serrano chiles
1 tsp dried oregano
½ cup white distilled vinegar
2 limes
2 - 3 tsp salt
2 whole chickens (butchered spatchcock)
Add all of your marinade ingredients and blend well in a blender. Take your chicken and apply the marinade inside the skin and outside. Coat well and rub in, you want the chicken to be covered in the marinade.
Let the chicken marinate for at least 4 hours, I like to let it sit for at least 24 hours.
Pollo Asado is traditionally grilled over Mesquite charcoal. Even though I smoke this starting off with lower temperatures and increased to have it done in less then 2 hours. You can cook this many ways, hot and fast or low and slow.
What ever method you choose, just ensure the internal temp is 165 degrees in the breast. That is the thicken part of the chicken and you want it really close to 165. You do not want a dry chicken breast, its best to check it and check it often that way you end right at 165 degrees.
Once done, cut into sections and serve with rice, beans, tortillas and salsa. Oh yeah, don’t forget the lemon!

GREEK CHICKEN RECIPE (from @shesinherapron )
4 boneless, skinless chicken breasts
1 tbsp olive oil
1/4 cup Greek Vinaigrette dressing
1/4 cup chicken broth
1 onion, chopped
1 red bell pepper, seeded and sliced
1 tsp dried thyme
small can sliced black olives, drained
1/4 cup feta cheese
Season the chicken however you like. Heat oil in pan over medium-high heat. Add chicken and cook until browned on both sides. Add in Greek dressing and chicken broth. Blend and simmer for 3 minutes. Add onion, thyme, red pepper, olives and feta. Cook until veggies are tender and chicken is done. Serve over rice!

Mexican Pollo Asado/Mexican Marinated Chicken
2 lb boneless skinless chicken thighs
Marinade:
1 bunch of cilantro (after I made this I realized that I could have used 1/2 this amount of cilantro.)
juice of 2 oranges
juice of 2 limes
2 packets of Sazon seasoning Goya
(con culantro y achote) (coriander & annatto)
1 tbsp white wine vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 onion
1/4 cup olive oil
**cook approximately 5 to 6 minutes on each side.**
Pollo Asado - Chicken Tacos - Mexican Food
Pollo Asado is pretty common in my house, I make a lot of chicken tacos and burritos. So, this recipe is in rotation several times a week. Its an inexpensive meal and is very easy to make. The best part is you can do so much with it, tacos, salads, burritos, sandwiches. I mean you name it; I am sure this grilled marinated chicken you can do so much with it. Its tasty and easy to do, I hope you enjoy it!

Pollo Asado recipe:
3lbs of boneless chicken thighs
4 California chili pods
4 Guajillo Chili pods
1/2 onion
4 garlic cloves or 2 large cloves
1 orange
1 lime
1 tsp oregano
1/2 tsp cumin
2 tsp salt or to taste, but the marinade needs to be a little saltier, the meat doesn’t absorb all the sodium. So season slightly heavy.
2/3 cup white vinegar

El Polo Loco chicken ( copy cat recipe)
2 Tbsp white vinegar
4 gloves garlic minced
2 tspn salt
2 tspn Mexican oregano
1/2 tspn fresh ground black pepper
1 tspn chilli sauce
12 oz pineapple
1/4 cup fresh lime juice
2 Tbsp cooking oil
1/4 tspn cumin
8-16 drops yellow food coloring (optional)
in a bowl mix all ingredents together and place in a plastic zipper style bag add chicken and let marinade for 4-16 hours
place on a hot grill and cook on indirect heat and cook till an internal temp 165 degrees
serve with rice beans and warmed
