Easy Instant Pot beef stew
Why so serious? I don’t like waiting for beef stew! It’s a bit like torture because the house smells so good, but you can’t eat just yet! Fortunately I made this in our handy dandy Instant Pot and it didn’t take that long for me to smile again. Yummy! I made this stew with Portuguese chouriço and mushrooms for extra flavour. #stew #beefstew #comfortf #instantpot

How to make Beef Stew in the Instant Pot!
This Instant Pot Beef Stew is so easy to make!

.
This was my first recipe using my Instant Pot and omg I was so impressed! The IP can be a little intimidating at first but it’s so easy promise!
This stew would normally take me over an hour to make on the stove top. With The Instant Pot it only took 35 min to get super tender beef!
Ingredients ✍????
1.5 lbs of Beef cut into chunks
1/2 Tbsp Salt
1 Tsp Garlic Powder
1 Tsp Oregano
1 Tsp Cumin
1 (8 oz) can of Tomato Sauce
2-3 Carrots chopped
1/2 Green bell pepper diced
1/2 Cup Onion diced
2 cloves of Garlic
2 Potatoes chopped
1 Tbsp Olive Oil
Directions ????????????
✨1. Put the Instant Pot on saute mode and add olive oil to the pot.
✨2. Season the beef with salt, garlic powder, oregano, and cumin. Once the oil is hot add the beef and brown for 1-2 min. ✨3. Then add the carrots, potatoes, green pepper, onion, and garlic to the pot and cook for another 2 min. Then add the tomato sauce .
✨4. Put the lid on then set to high pressure for 35 min. Make sure your steam release valve is turned to sealing.
✨5. Let the timer run out then the instant pot will naturally release the pressure slowly on its own. Once the silver button pops in that’s when you can open the lid.
✨6. If you dont want to wait for the steam to naturally release (it can take about 20 min.)You can do a quick release and manually turn the valve from sealing to venting. Lots of steam will be released so be careful and use an oven mitt. Once the silver button pops in open the lid.
✨7. Serve and enjoy this delicious stew!
You can make this in the Slow Cooker too just cook on high for 4 hours or low for 8 hours.
This stew actual taste better the older it gets! Making it a great meal prep idea. Pair with brown rice. ????
It’s about 234 calories per cup of stew. Keep track on the My Fitness Pal App!
