How To make Quick Fruit And Ricotta Pizza
Ingredients

each
pizza dough, 10 oz package, refrigerated
2
oz
prosciutto, paper-thin slices
8
oz
ricotta cheese, part-skim
2
teaspoon
lemon peel, grated
2
each
nectarines, or peeled peaches, pitted, thinly sliced
3/4
cup
grapes, dark, seedless, halved
2
tablespoon
sugar
1/4
teaspoon
cinnamon, ground
Directions:
Unroll dough and press evenly into an oiled 14 inch pizza pan (or 10x15 inch pan). Bake on bottom rack in a 425 degree oven until crust is well browned, about 8 minutes.
Cut enough prosciutto into 1/4 inch strips to make 1/4 cup, set remainder aside. Mix ricotta and lemon peel. Drop in 1 tablespoon portions over crust. Arrange nectarines, grapes, and prosciutto strips on crust. Combine sugar and cinnamon; sprinkle over pizza.
Bake until fruit is hot to touch, about 5 minutes longer. Accompany with remaining prosciutto. Cut into wedges.
Serves 6.
Per serving: 234 calories (22% from fat), 5.6 grams fat, 487 m sodium, 17 mg cholesterol.
OMMENTS: A ready-to-cook refrigerated pizza crust, the base for the breakfast pastry, makes morning baking a snap. In addition to the fruit pastry, offer more fresh grapes and nectarines for munching.

Blackberry Basil and Ricotta Pizza
Imbolc is coming up, so I made a Blackberry Basil and Ricotta pizza. When I was first introduced to this recipe I was skeptical. It’s such an unusual combination, and I really didn’t know what to expect. It was surprisingly delicious!
I chose this as one of my recipes to celebrate Imbolc because I wanted to make something with blackberries. Imbolc is closely linked to the Goddess Brigid, and blackberries are sacred to her.

Ingredients:
Pizza dough (homemade or store-bought)
1-2 tablespoons olive oil
Approximately 2 cups of blackberries
1 cup mozzarella cheese
1 cup Parmesan
1 cup ricotta
1/4 cup fresh basil (more or less to your liking)
Salt and pepper to taste

Plant Based Cold Ricotta Pizza/Vegan- Easy for Beginners
This Cold Ricotta Pizza is perfect for snacking, entertaining or a meal. Full of fresh vegetables and tofu ricotta brings this together with the easiest homemade pizza crust. Make the crust from pantry stables, and use up veggies in in your fridge. My tofu ricotta adds extra protein to this delicious cold pizza.

Pizza Dough
Ricotta Tofu
1 block Extra Firm Tofu
2 tbsp nutritional yeast
2-3 garlic cloves
1 tbsp Apple Cider Vinegar
handful of fresh basil
zest and juice one lemon
3-6 tablespoons water as needed
salt and pepper to taste
Break up tofu into food processor and add remaining ingredients except the water.
Process mixture until even consistency add the water 1 tbsp at a time
Spread on to your baked pizza crust and top with fresh vegetables or fruit if you would like a dessert pizza, you can add 1 tbsp of maple syrup to the Ricotta and omit the Basil.
