2.00 c Water
1.00 c Reduced-cal margarine;
15.00 oz (1)pkg raisins;
Sugar sub to equal 3 cups -sugar 2.00 ts Baking soda;
0.25 c Water;
2.00 Eggs; beaten
4.50 c All-purpose flour;
1.00 ts Ground cloves;
1.00 ts Allspice;
1.00 ts Ground cinnamon;
Vegetable cooking spray; Bring 2 cups of water to a boil n a large saucepan; stir in margarine and raisins, and boil uncovered 5 minutes. Remove from heat, and cool raisin mixture to lukewarm. Stir in sugar substitute. Dissolve soda in 1/4 cup of warm water; add to raisins mixture,
stirring well. Stir in eggs. Combine flour, cloves, allspice, cinnamon, and baking powder; gradually add to raisins mixture, stirring after each addition. Stir in eggs. Spoon batter into 10" Bundt pan coated with vegetable cooking spray. Bake at 350 degrees for 50 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool cake in bundt pan 10 minutes. Remove from pan; let cook on wire rack. Ingredients:
250g butter (牛油)
150g (2/3 cup) caster sugar (细砂糖)
4 large eggs(鸡蛋)
1 tbsp golden syrup (金黄糖浆)
200g (1 2/3 cups) plain flour (普通面粉)
1 tbsp mIlk powder (奶粉)
1/2 tsp baking powder (发粉)
250g (2 cups) Raisins or Sultanas(葡萄干)
60g (1/2 cup) high proteine flour (高筋面粉)
Bake at 160°C for 45 minutes

Here is a simple Walnut-Raisin Coffee Cake that is easy to make and tastes great!
Made in a 5 X 2 pan, Baked in a Nuwave Oven.

Ingredients for cake:
1 Egg
1/2 teaspoon oil
½ Cup Brown sugar
¾ Cup Self-rising flour
Pinch of baking soda
Dash salt
¼ teaspoon cinnamon powder
¼ Cup chopped walnuts
¼ Cup raisins
Stir until combined and add coffee a little at a time to make thick batter
1/8 Cup coffee
Bake at 300 – 30 minutes (check with toothpick)

1/2 Cup raisin (mix)
180 grams Soft butter (room temperature)
1 and ½ Cups granulated sugar
4 Eggs
2 and ¼ cups All purpose flour
1 Tbsp Baking powder 15 grams
pinch of baking soda
1 Tsp Vanilla
¼ Tsp salt
1 Tbsp orange zest
3/4 Cup Orange juice (200 ml)

Greek Vegan Cake: Cinnamon Raisin Cake from Kalamata

Ingredients
3 cups (400g)
1/4 teaspoon salt
1 cup raisins
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoons ground cloves
zest of an orange
1 cup light olive oil
1 cup (220g) granulated sugar
1 and 1/3 cup orange juice
1/2 teaspoon baking soda
2 teaspoons pure vanilla extract
Flax egg: 4 tablespoons ground flax seeds plus 1/2 cup water (or 2 eggs)
Garnish: confectioner's sugar and ground cinnamon
Instructions
Preheat the oven to 350 °F, 180 °C.
Combine the flax seeds and water together and set aside.
Combine the flour, baking powder, cinnamon, cloves, salt, and orange zest together in a bowl and whisk them together.
In a large mixing bowl combine the oil, sugar, flax mixture, and vanilla and whisk together until incorporated.
Combine the baking soda and the orange juice together and add to the oil mixture. Whisk together.
Add the flour mixture but set aside a quarter cup of it and combine it with the raisins. Whisk together until the flour is incorporated and then add the raisins and fold them in with a spatula.
Lightly grease a 9 by 13-inch baking pan with olive oil or baking spray. Spread the cake batter evenly in the pan.
Bake on the center rack of the preheated oven for 35 minutes or until a cake tester that has been inserted in the center of the cake comes out clean or with a few moist crumbs attached.
Allow the cake to cool at room temperature.
Cut into serving pieces and dust with confectioner's sugar and cinnamon.
Serve with Greek coffee. Kali Orexi!

Italian Apple and Pear Cake with Raisins
This apple and pear cake is a variation from the Italian Umbrian specialty. It is rich in fruit containing at least 80 percent fruit and is deliciously soft and moist.
The addition of delicate pears and soaked raisins brings this recipe to another level.
The rum is totally optional, but if you like the taste of rum in your desserts, please add it in, you will love this.
Cover and refrigerate once cooled down, and it’s best to serve it warm. Try and use good quality cooking pears and apples for a better result.
For the cake pan, the size I used is a 9inch - 23cm spring form.
