How To make Red Chile Sauce
2 tb Lard or bacon drippings
2 tb Flour
1/4 To 3/4 cup ground red chile
2 c Cooled beef bouillon or
-water Up to 4 ounces of tomato -sauce (optional) 3/4 ts Salt
1 Garlic clove, crushed
Pinch of ground Mexican -oregano (optional) 1 ds Of ground comino (optional)
Makes about 3 cups Melt lard in a saucepan over low heat. Add the flour and stir until well mixed and slightly browned. Add teh smaller amount of chile to the bouillon or water, either when trying a new batch of chile or when preparing this recipe for the first time. Taste, then add more chile after the water is well mixed into the roux. Stir constantly when adding the water and continue to stir until a smooth sauce is obtained. Add tomato sauce, if desired. Slowly add it to the dlour mixture, stirring constantly. Season; taste and adjust the seasonings. Simmer for at least 10 minutes, or longer, to develop the flavor. Northern New Mexico Red Chile Sauce
This video is a quick overview of how to make classic Northern NM Red Chile Sauce. My Mom taught me how cook red Chile sauce when I went off to college at NMSU in Las Cruces. This video is dedicated to our good friends Antoine, Lyn and Anya.
Ingredients:
1 LB ground beef
2 heaping tablespoons all purpose four
6-7 heaping tablespoons Fine ground red chile powder (NM chile)
1/2 teaspoon Garlic powder, or minced/chopped fresh garlic cloves.
Salt and pepper to taste. It takes a fair amount of salt to get it tasty.
Use this red chile sauce for beans and chile, frito pies, enchiladas and anything else including potatoes such as for holiday mashed potatoes.

CARNE CON CHILE COLORADO | Beef In Red Chile Sauce ❤
This CARNE CON CHILE COLORADO is a delicious Mexican dish stewed in a red Chile sauce. It is a very versatile dish, it is one if Mexico's favorite dishes for weddings, it can go from being served at a wedding to being served at home in burritos, gorditas, tacos, tostadas or any way you like. I love serving this amazing dish with Mexican red rice and frijoles de la olla and freshly made flour tortillas. This dish is one of my absolute favorite dishes because it is hearty and packed with flavor. ❤
INGREDIENTS----------------
2 1/2 lbs. Chuck roast (cubed 1 inch size)
6 guajillo chiles (clean and seeds and veins removed)
1 Ancho chile (cleaned and seeds and veins removed)
2 Chile Puya ( cleaned and seeds and veins removed) you can leave these out, little heat.
3 tomatillos
2-3 tsp vegetable oil (for searing)
1/2 chopped onion
2 bay leaves
1 tsp whole cumin (freshly ground)
1 tsp black peppercorns (freshly ground)
3 large garlic cloves (blender)
2 whole Allspice (freshly ground)
1 1/2 C. Water for blender
1 to 1 1/2 C. water (in pot you decide amount)
2 tsp Mexican oregano
1 Tbsp Chicken bouillon
2 tsp All purpose flour
1 1/2 tsp brown sugar (to sear)
salt (to sear)
pepper (to your liking)

-Pani (Water) 1 Cup
-Cheeni (Sugar) ¼ Cup
-Lal mirch (Red chili) crushed 1 & ½ tsp
-Namak (Salt) ¼ tsp or to taste
-Tomato ketchup 3 tbs
-Pani (Water) 2 tbs or as required
-Corn flour 2 tsp
Directions:
-In sauce pan,add water,sugar,red chili crushed,salt,mix well and bring it to boil.
-Add tomato ketchup and mix well.
-In water,add corn flour and mix well and add it in sauce pan,mix well and cook until sauce thickens & set aside.
-Can be stored for up to 1 week in refrigerator.

-1 week tak refrigerator mein store ker saktay han.
