How To make Refrigerator Confetti Brownies
NORMA WRENN NPXR56B:
3 c Graham cracker crumbs
2 c Colored miniature
Marshmallows 1 c Walnuts or pecans; chopped
1 c Confectioners' sugar
2 c Semisweet chocolate chips
1 c Evaporated milk
1/2 ts Peppermint extract; optl
In a large bowl, combine the crumbs, marshmallows, nuts and sugar. In a saucepan, melt chocolate chips and milk over low heat, stirring often until blended and smooth. Remove from the heat; add extract if desired. Set aside 1/2 cup. Pour remaining chocolate mixture over crumb mixture; stir until
well blended. Pour batter into a greased 8-inch square baking pan. Press down evenly. Frost wtih reserved chocolate mixture. Chill for 1 hour. Source: Country Woman, Collector's Edition -----

Claire Saffitz Makes Confetti Cake | Dessert Person. Get ready to party! And by party, we mean stay at home and be safe. But fortunately, you need no special occasion to make this delicious, celebratory, kid-friendly, and deeply nostalgic confetti cake. A tender white birthday cake studded with rainbow sprinkles and covered in smooth, tangy cream cheese frosting, it tastes like childhood (which is to say, better than the box). We took a hiatus but Claire and her crew are back with Season II of Dessert Person -- check out this first episode!

Ingredients:
Confetti Cake:
Butter for the pans
5 1/2 cups cake flour (23.3 oz/ 660g)
2 1/2 cups sugar (16.4 oz / 466g)
4 1/2 teaspoons baking powder (0.63 oz / 18g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)
3/4 teaspoon baking soda
3 sticks unsalted butter (12 oz / 340g), at room temperature
1 1/2 cups buttermilk (12.7 oz / 360g)
1/3 cup neutral oil, such as vegetable or grapeseed (2.6 oz / 75g)
3 large eggs (5.3 oz / 150g), at room temperature
6 large egg whites (7.4 oz / 210g), at room temperature
1 tablespoon vanilla extract
1/2 teaspoon almond extract (optional)
1/2 cup store-bought rainbow sprinkles (3.3 oz / 93g), plus more for decorating

✅Ingredients
CAKE:
• 1 cup salted butter, softened
• 1½ cups sugar
• 2 teaspoons vanilla extract
• 3½ cups flour
• 4 teaspoons of baking powder
• 1/2 teaspoon salt
• 3 large eggs
• 1½ cups buttermilk*
• 1 cup sprinkles
FROSTING:
• 1½ cups softened butter
• 8 ounces cream cheese
• 3 teaspoons vanilla extract
• 6 cups powdered sugar
• 2 tablespoons milk
• 2 cups sprinkles for decorating

1️⃣ 00:23 - Grease three 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F.
2️⃣ 00:58 - In a large mixing bowl, use a hand mixer to cream the butter and sugar together. Beat in vanilla extract.
3️⃣ 01:34 - Use a fork to combine the eggs and buttermilk together in a bowl or 2 cup liquid measuring cup. Set aside.
4️⃣ 02:16 - In another mixing bowl stir together flour, baking powder, and salt.
5️⃣ 02:32 - Add 1/3 of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined followed by the remainder of the buttermilk mixture. Add in the remainder of the dry ingredients and mix with the hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in. Gently stir in sprinkles. Do not over stir or colors will bleed.
6️⃣ 03:44 - Divide the batter among the three prepared pans. Bake at 350 for 25 to 30 minutes. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely before layering and frosting.
7️⃣ 04:07 - To make frosting, beat softened butter together with cream cheese and vanilla extract and 2 cups powdered sugar until light and fluffy. Slowly add in remainder of powdered sugar and use milk to thin as needed. Frost and assemble cake layers with frosting in between, and to cover the outside.
8️⃣ 06:02 - Decorate with additional sprinkles.
