Reuben Sandwich Casserole
Serves 6-8
Ingredients
•6 slices rye bread, divided
•1 pound pastrami or corned beef, thinly sliced or shaved
•1 (14.5 oz.) can sauerkraut
•4 cups Swiss Cheese, shredded
•1 cup dill pickles, chopped
•1 cup milk
•1/3 cup Thousand Island dressing
•1/4 cup mustard
•3 large eggs
Directions
1.Preheat oven to 350º F and lightly grease a 9×11-inch baking dish with butter or non-stick spray.
2.Take four pieces of rye bread and cut them into cubes. Place remaining bread in food processor, pulse until you’ve got fine breadcrumbs and set aside.
Spread cubed bread out along the bottom of your baking dish, then cover with 1/2 of pastrami. Top beef with sauerkraut, pickles, and 2 cups cheese. Pour wet ingredients evenly over the casserole, then top with breadcrumbs.
Place baking dish in oven and bake for 40-45 minutes, or until mixture is bubbly, top is browned and center is set. Remove from oven and serve hot.

How to Make a Crazy Good Reuben Casserole
All the crazy goodness of a reuben sandwich, but in an easy to make and delicious Reuben Casserole. Layer marbled rye bread, corned beef, sauerkraut, 1000 island dressing, and Swiss cheese in a baking dish and bake until hot, crispy, and melty. Ideal for a comforting and homey lunch or dinner.
This is a perfect dinner recipe for St. Patrick's Day.

These can be enjoyed on a low carb or keto diet without any guilt! So enjoy the Ruben and save the carbs for something you really want later on! These are super easy to throw together and with St. Patrick's day around the corner a great way to use leftover corned beef. In the event that you don't have any leftovers on hand, these are just as easy to make with corned beef from the deli. I have used a half pound to make two stacks. That is four ounces of corned beef per serving and just about the right amount according to nutrition guidelines. I have added some sauteed sauerkraut as well because you cannot have a Ruben without the kraut!
I prepared my kraut by caramelizing some onion in some butter then adding the kraut to the pan. This helps to both heat and dry out the sauerkraut a bit and it infuses it with the oniony flavor that I am looking for. Gives this a nice sweet and sour vibe from the sweet onion and the tangy sauerkraut. I piled this on top of my corned beef then added some slices of havarti cheese. You can add swiss or baby swiss for a more traditional approach, but I prefer either havarti or muenster on my Ruben for the buttery smooth flavor it lends to mellow out this very strong batch of flavors.
I piled all of these on a baking sheet and popped them in the oven at 350 for just about 5 minutes. You may want to keep an eye on yours so that you know when the time is just right for you. I only like my cheese to be melted but not browned. You make these to your preference.
When I pulled them out of the oven, I plated them with a spatula and then added a ramekin of my sugar free thousand island dressing to the side. You can pour this over your stack and enjoy or do like I did and dip each bite.
This stack is definitely a fork and knife affair. If you prefer eating a Ruben sandwich style without the extra carbs from the bread I suggest you place the filling between several layers of either Romaine or iceberg lettuce and enjoy. This will give you the experience of eating a sandwich without the extra bread. It's quite delicious that way and extra crunchy, but be sure to use a lettuce that has some heft and staying power to it otherwise you will still be eating it with utensils.

Reuben Casserole
This is a super quick & easy recipe to throw together with leftover corned beef!
This is a family favorite I should make more often. Because I know everyone loves it and corned beef is on sale now, I got 2 and tossed them in the crockpot overnight. The next day I took them out to cool while I went about my day and threw the casserole together at the end of the day.
I suggest making a double batch or making one and using the other corned beef for another meal.
Reuben Casserole
Serves 6-8 (doubles nicely)
4 ounces cream cheese, room temperature
1/2 c finely chopped onions
Half (12 oz) jar of thousand island dressing (I used Marie’s)
16oz cooked and shredded corned beef
8oz sauerkraut, drained
5 oz bag of shredded Swiss cheese
1 tsp caraway seeds (optional)
Preheat oven to 350. Grace an 8 or 9 inch square pan.
In a large bowl, mix the cream cheese, thousand island dressing and onions together. Add the corned beef, sauerkraut, Swiss cheese, caraway seeds and mix well.
Spoon everything into a prepared dish and bake for 20 to 22 minutes until bubbly and browned on top!
Serve with a relish tray of pickled vegetables, crudités and deviled eggs or alongside cauliflower or broccoli mash.
