Ingredients
1/2 cup 125g popcorn kernels to create 3 cups of cooked popcorn
250g milk chocolate
Pinch of Salt
400g mini marshmallows
170g dried or glace fruit such as glace cherries, craisins or dried blueberries

Silvana Franco's Halloween Rocky Road | At Home | Waitrose
Food editor Silvana and her family love Halloween. But like most of us, they’re staying home instead of trick or treating this year. So they’re making these rocky road squares decorated with vampire faces for a spooky treat.
These no-bake, easy-to-make squares are jam-packed with great texture, using popcorn, mini marshmallows and jelly sweets instead of the traditional biscuit. Silvana and her daughter Cassia have gone for a vampire design but you could also make a spider, using the chocolate button as the body of and the strawberry laces as its legs.
Ingredients:
½ tbsp sunflower oil, plus extra for greasing
100g unsalted butter, cubed
1 tbsp golden syrup
300g milk chocolate, broken into pieces
150g dark chocolate, broken into pieces
30g popcorn maize
80g jelly sweets, such as Teeth & Lips and Fizzy Watermelon Slices
50g essential Mini Pink & White Marshmallows
16 large chocolate buttons
1 tbsp milk chocolate chips
Edible eyes, white writing icing, and strawberry laces, to decorate

Easy Weekday Recipes | Chocolate-covered rocky road popcorn lollies
How to make chocolate-covered rocky road popcorn lollies.
If you're looking for a truly decadent afternoon snack...
Ingredients (makes 12-15):
3 cups miniature marshmallows
1/4 cup butter
8 cups caramel popcorn
1/2 cup sweetened dried cranberries
1/2 cup toasted flaked almonds
1/2 cup miniature chocolate chips
Lolly sticks
100g milk chocolate for dipping
Popcorn crumbs & crushed flaked almonds for rolling
Method:
Melt the marshmallows and butter together in a pan over a medium heat until blended and smooth, about 5 minutes. Remove from the heat, add the popcorn, cranberries and almonds and stir to completely coat them with the marshmallow mixture. Add the chocolate chips and stir well.
With greased hands, shape into golf ball sized balls, and insert a lolly stick into one side. Place in the fridge to set.
Mix the popcorn crumbs and crushed flaked almonds together in a bowl.
When the lollies have completely set, melt the chocolate in the microwave, carefully or it will burn. Dip the top half of the lollies in the chocolate, then roll in the popcorn crumbs and crushed flaked almonds. Return to the fridge to set.

I know that Rocky Road can mean different things to different people, depending on where you live, but for me it's white chunks of soft and spongy marshmallows together with crunchy nuts, all covered in a rich dark chocolate.
