180g block dark choc
200g dark tim tam biscuits or other dark biscuits
280g marshmellows
approx 110 g crushed nuts
100g glace cherries
180g of any turkish delight

Rocky Road Ice cream made with only 5 ingredients and no ice cream maker needed. It's rich, creamy, and chunky with the most intense chocolate flavor!

How to Make Rocky Road Ice Cream
✅ Ingredients:
14 ounces sweetened condensed milk, very cold
3/4 cup quality cocoa powder
2 cups heavy cream, very cold
1 cup mini marshmallows
1/2 cup chopped cashew nuts
✅Instructions:
In a large chilled bowl, combine condensed milk and sifted cocoa powder. Stir together until cocoa powder is well dispersed and there are no lumps.
Add heavy cream.
Using a hand mixer at low speed, beat the mixture for about 1 to 2 minutes or until the mixture thickens.
Increase speed to medium and beat for about 3 to 5 minutes or until stiff peaks form.
Add mini marshmallows and cashew nuts and gently fold in until evenly distributed, being careful not to deflate the cream.
Transfer mixture into a 9 x 5 loaf pan. Cover with plastic film, lightly pressing film on the surface of the cream mixture (this is to prevent ice crystals from forming).
Freeze for at least 6 hours or overnight. Serve frozen.

How to Make Gingerbread Rocky Road Fudge | RECIPE
Cookmas Day 3: Easy Gingerbread Fudge! This fudge is flavoured with homemade gingerbread spice mix and filled with marshmallows and gingerbread men. RECIPE BELOW!
Ingredients
Gingerbread Spice Mix:
1 tbsp + 1 tsp ground cinnamon
1 tbsp allspice
1 tbsp ground ginger
1 ½ tsp nutmeg
1 ½ tsp ground cloves
Fudge:
500g milk chocolate
300g dark chocolate
250g unsalted butter
8 tbsp golden syrup
2 tsp gingerbread spice mix (see above)
150g gingerbread men, broken into pieces
300g mini marshmallows
cooking spray
gingerbread men icing toppers
festive sprinkles

ROCKY ROAD CLUSTERS!! SWEET HOLIDAY TREAT!!
Today I have a quick and easy sweet treat for you. This is a totally shareable an giftable treat for the holiday season. If you are a fan of quick and simple this is for you! This one really harkens back to the candies of yore. I mean this one is really delicious and a total throwback to my childhood! Remember the candy counter at the Sears Roebuck store? These were a favorite of my grandfather and he would get some of those and I would get Swedish fish. That is a happy memory!
These use only a few ingredients and it is also totally adaptable to a change up! Don't like marshmallows? Make straight up peanut clusters! Or use the nut of your choice! Pecan, walnut, almond or even shelled Brazil nuts will be delicious! Want to use some raisins or dried cherries? Perfection! Or you can mix this up and do a fruit and nut cluster with the nut and dried fruit of your choice. I don't think there are any wrong choices here!
