1 pk Fudge brownie mix (21.5 oz)
1 1/2 ts Instant coffee powder
1 1/2 ts Rum extract
2/3 c Walnuts; chopped
1 c Heavy cream
2 ts Unsweetened cocoa powder
3 ts Powdered sugar
Salt, a dash 1 c Miniature marshmallows
Recipe by: 365 Great Chocolate Desserts. Preheat oven to 350 degrees F. Line a 9-inch square baking pan with foil. Grease foil. Prepare brownie mix according to package directions. Stir in coffee powder, 1 teaspoon rum extract, and 1/3 cup nuts. Turn batter into prepared baking pan. Bake according to package directions, 25-28 minutes, being careful not to overbake. Let cool completely. To prepare rocky road filling and topping: In a medium bowl, with an electric mixer on medium speed beat cream to soft peaks. Beat in cocoa, powdered sugar, and salt until well mixed. Fold in remaining 1/3 cup nuts, remaining 1/2 teaspoon rum extract, and marshmallows. o assemble cake, cut brownie square into 3 equal strips. Stack strips together with rocky road filling in between and on top. Refrigerate 4 to 5 hours or overnight to allow flavors to meld. To serve, cut into 3/4-to 1-inch slices. -----

90g dessicated coconut, toasted (in an oven for 5 mins at 180C is fine)
3/4 pack of Oreo cookies (about 9 cookies)
150-200g caramelised/toffee popcorn (homemade or from a packet!)

How to make a rocky road fridge cake.
Rocky road is a no bake fridge cake which consist of melted milk chocolate and marshmallows. You can then add a selection of your favourite chocolates for extra sweetness and crunch. In this video we used Twix for that caramel taste, a Crunchie for the perfect honeycomb crunch, Digestive biscuits and Smarties for sweetness and colour. Set in the fridge overnight for best results and cut into square for the perfect bite!
Ingredients
250g milk chocolate (you can use dark or white chocolate if you wish.)
130g butter
20g golden syrup
40g digestive biscuits (or any other biscuit you like)
40g marshmallows
Twix
Crunchie
Smarties (choose any chocolate you like)
Topping:
150g milk chocolate
Handful of marshmallows and smarties (or whatever you like)

Rocky Road Graham Float
ingredients:
740ml all purpose cream(chilled overnight)
300ml condensed milk(chilled overnight)
20 single pack Grahams Chocolate
1-2 cups cocoa powder
1 cup mini marshmallows(more if needed) *extra for toppings
3/4 cup coasted peanuts(more if needed) *extra for toppings
1 tsp vanilla extract(optional)
10g Gelatine clear and unflavored(optional)
1/8 cup hot water
Procedure:
1) In a bowl combine condensed milk, cocoa powder and vanilla extract. Mix well
2) Whip all purpose cream for 5 minutes on high speed
3) Gradually add chocolate-milk mixture and whip for another 3-5 min.
4) Combine hot water and gelatine. Mix until gelatine dissolves. *do not add hot gelatine into the cream mixture
5) Add dissolved gelatine and mix for 10-15 seconds
6) Add mini marshmallows and roasted peanuts
7) Fold into the cream mixture
8) Arrange grahams into the container
9) Gently pour the chocolate cream mixture
10)Add toppings and Chill for 4 hours or overnight

Rocky Road Ice cream Cake
ingredients:
1 loaf chocolate cake or 700g(more if needed)
370ml all purpose cream(chilled overnight)
1/2 cup evaporated milk(chilled overnight)
3/4 cup condensed milk(chilled overnight) more if needed
1 cup cocoa powder(more if needed)
1/2 cup mini marshmallows(more if needed)
1/3 cup roasted peanuts(more if needed)
1 tsp vanilla extract(optional)
chocolate syrup(optional)
Procedure:
1) In a bowl combined condensed milk and evaporated milk.
2) Add vanilla extract and Cocoa powder. Mix well.* Place Chocolate-milk mixture inside the chiller or freezer
3) Slice the cake
4) Line the bowl with plastic/cling wrap
5) Arrange the cake slices inside the bowl and set aside
6) In a separate bowl whip all purpose cream for 5 minutes on highspeed
7) Gradually add the chilled chocolate-milk mixture and whip for another 3-5 minutes on highspeed
8) Fold mini marshmallows and roasted peanuts into the cream mixture
*optional: add chocolate syrup
9) Gently pour the cream mixture into the prepared bowl
10)Cover the surface with cake slices
11)Cover with cling wrap and freeze overnight
12)*optional: frost the ice cream cake with chocolate ganache
Top with mini marshmallows, peanuts, chocolate chips and chocolate syrup
