How To make Rose's Cinnamon Rolls
1/2 Recipe basic sweet dough
-(recipe follows) 1/4 c Melted sweet butter
1 tb Cinnamon
1/2 c Sugar
Servings: one dozen rolls Make basic sweet dough. Grease a baking sheet. Roll the dough into arectangular sheet 1/2" thick. Sprinkle liberally with melted butter, cinnamon and sugar. Roll tightly like a jelly roll and cut into 1" thick slices. Place about 1" apart on baking sheet. Let rise for 1 hour and bake in 350 degree oven for about 45 minutes. Remove from oven - cool and ice with
powdered sugar glaze. BASIC SWEET DOUGH (makes enough for two dozen cinnamon rolls) 1 qt milk 3 oz yeast (6 small squares) 2 cups sugar
14 cups all purpose flour 1 tb salt 1 lb sweet butter
12 egg yolks
Scald milk and cool to lukewarm. Add yeast, 1 c. sugar and 2 c flour. This is your sponge. Let it rise about 30 minutes. In a large bowl, sift in the rest of the flour, salt and remaining sugar. With your fingertips, work butter into the dry ingredients, then add yolks and the yeast sponge. Stir, then work with your hands until quite thick. Knead the dough on a board sprinkled with flour until it becomes smooth and elastic. You may have to add more flour to make for easier handling. Cover and let rise about 1 - 1 /2 hours. Punch down and knead again for a few minutes. Cover and let rise again for 30 minutes. POWDERED SUGAR GLAZE 2 cups powdered sugar 1 tsp vanilla 1/4 cups hot

This recipe is PERFECTION! It's fun and looks fancy but is SO easy. It is also one of the most delicious things you're going to eat this Fall. Cinnamon Rolls (Buns)
Cinnamon Rolls (Buns) Recipe
Prepare: a square pan 23cm (9 inch) lined with baking paper
PREHEAT the oven for at least 20 minutes at 170C before baking, set the oven rack in the lower third of the oven
The dough:
300g bread flour (or all purpose flour) - 2 1/3 cup
160g milk - 2/3 cup
1 egg (medium size, 55g)
30g sugar (2 tbsp)
1 tsp (4g) instant dry yeast
1/2 tsp salt
40g unsalted butter (room temp)
The filling:
80g brown sugar - 1/3 cup
1 tbsp ground cinnamon
a pinch of salt
Cream cheese frosting:
150g cream cheese (3/4 cup)
30g powdered sugar (3 tbsp)
2 - 3tbsp milk
1/2 tsp vanilla extract

HOMEMADE CINNAMON ROLLS w/ BROWNED BUTTER CREAM CHEESE FROSTING!!!
Ingredients:
For the dough..
(Wet mixture)
1 cup warm milk ( not too hot) but warm to touch..
2 1/2 tbs dry active yeast
1 tbs sugar
Dry ingredients for the dough:
4 1/2 cups bread flour (I prefer to use bread flour .. but you can use all purpose)
1/2 stick soften butter
1/3 cup sugar
1tsp salt
2 eggs ..
For the cinnamon roll mixture:
1 1/2 cup brown sugar
2 sticks butter ( soften)
2 1/2 tablespoons cinnamon
Browned butter cream cheese icing:
2 stick butter ( browned; chilled)
1 8 oz pack cream cheese ( soften)
2 1/2 cups powdered sugar
1tsp vanilla
1tsp salt ( optional)
