Recipe/Ingredients:
• 75 g of strong bread flour
• 125 g of water
• 60 g of margarine or butter
• 2 eggs
Methods:
• Place the water and margarine into a saucepan and bring to the boil, melting the margarine.
• Remove from the heat and then add the flour to make a roux. Beat it with a wooden spoon until it thickens. Put it back on the stove on low heat and then beat it again until the smooth roux leaves the side of the saucepan. Remove from the heat.
• Add the beaten eggs bit by bit. Keep beating until the eggs disappears and no eggs can be seen.
• Place the choux paste in a piping bag and then pipe a little bit on the sides of the baking tray to help glue the baking paper. Pipe consistent shapes and sizes of profiteroles onto the baking tray. Dip the fingers in cold water and gently press the top of the profiteroles.
• Bake at 225 degrees centigrade for 12 minutes. Once baked, turn down the oven to 150 degrees centigrade and cook for 8 minutes. Once done, remove from the oven and allow to cool.
• Once cool, make a hole with a knife at the bottom of the profiteroles and then fill each profiterole with the pastry cream. Dip the top of each profiterole into the warm chocolate sauce.

VAMPIRE BITE SUGAR COOKIE RECIPE
Vanilla Sugar
3 1/4 C flour
1 tsp baking soda
1/2 tsp salt
1 tsp nutmeg
1 tsp. baking powder
1/2 C Butter
1 C sugar
1 egg
1 tsp vanilla
1/2 C thick sour cream
Seedless Raspberry Jelly
vanilla sugar
Preheat the oven to 350 degrees
Sift the flour, baking soda, salt, nutmeg and baking powder
in another bowl beat the Butter, sugar, egg, vanilla and sour cream
Mix the dry ingredients into the wet until combined
divide into 4 flat disks, wrap in wax paper and refrigerate 4 hours or overnight.
Roll out the dough between parchment paper, thinner than normal, less than 1/4 of an inch
Cut out your circles and spread out the circles just a little bit, then roll them out as evenly as you can until they are about 1/8th of an inch (a little more is okay)
Dab a small amt of the jelly in the center of half the circles, then top each jelly circle with one of the plain circles.
Now cut the cookies one more time to seal the two layers together
sprinkle the vanilla sugar on the top to add a sweet crunch
Using a toothpick break through JUST the top layer into the jelly twice to create you teeth marks
bake 12-15 mins, until just slightly golden on the edges
let cool then add a little extra jelly dripping from the teeth marks
