SIMPLE YUMMY BREAKFAST |Roasted Sweet Potatoes, Fluffy Pancakes, And Scotch Eggs

OVEN ROASTED SWEET POTATOES
4 large sweet potatoes, peeled, chopped and rinsed
100g melted butter
1/3 cup sugar
½ tbsp cinnamon
½ tbsp vanilla essence
Pinch of salt
Preheat your oven at 200°C.
Put the sugar, cinnamon, vanilla essence a d salt into the melted butter.
Mix thoroughly.
Pour over the sweet potatoes on a baking sheet and coat evenly.
Put the sweet potatoes in the oven and roast for 30 minutes.
After 30 minutes turn the potatoes and roast for a further 20 to 30 minutes.
Serve warm, with tea or coffee.
FLUFFY PANCAKES
3 cups Self-raising flour
1/3 cup Sugar
½ tbsp Cinnamon
Pinch of Salt
½ tbsp Vanilla essence
50-70g Melted butter
2 large eggs
½ litre whole milk
1/4 tsp baking powder
Pour milk into a mixing bowl, and add sugar, eggs, salt, cinnamon, melted butter and vanilla essence.
Mix thoroughly.
Add the self-raising flour and baking powder and mix, to form a heavy (not runny) batter.
Put pan on a medium to low flame, and grease lightly.
Scoop out the batter onto the hot pan, until it bubbles on top and the edges are firm.
Flip to the other side and cook until golden on both sides.
Serve with tea or coffee.
(syrup is optional. We avoid it because it has too much sugar ????????????♀)
SCOTCH EGGS
10 large eggs, boiled for 8 minutes and peeled.
15 raw spicy beef sausages.
1.5 cups Breadcrumbs
Salt
Oil for frying
Spices: oregano, royco, paprika, onion powder
2 eggs for coating
Remove the sausage meat from the bag and pour into a mixing dish.
Mix oregano and onion powder into the sausage meat thoroughly with a fork. Set aside.
Beat two eggs in a plate and set aside.
Pour breadcrumbs into a plate and add paprika, royco and salt. Mix well.
Heat oil in a frying pan (about 1 inch deep). I used vegetable oil.
With clean hands, take a boiled egg and coat it with the sausage meat, ensuring an even coat.
Dip the coated egg into the beaten egg, then into the spicy breadcrumbs to form an even coat.
Once you have about 5 eggs coated, put them into the now hot frying oil, until golden brown on all sides. This takes roughly 5 minutes per egg.
Serve hot or cold.

How To Make Vegetarian Scotch Egg (Scotch Egg With Green Herbs)
How to make vegetarian scotch egg, scotch egg with green herbs. How to turn an ordinary egg to a delicious dish.
Vegetarian Scotch egg infused with vibrant green herbs. This twist on a classic dish is perfect for those seeking a vegetarian alternative or simply looking to add more plant-based options to their meals. Combining a crispy exterior with a luscious, herb-infused filling, this vegetarian Scotch egg promises a delightful explosion of flavors and textures.
Ingredients:
4 large free-range eggs
2 cup fresh breadcrumbs
1/4 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
1/4 cup fresh chives, finely chopped
1 teaspoon dried thyme
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
All-purpose flour for coating
Vegetable oil for frying
1: First, boil four of the eggs by gently placing them in a pot of boiling water and cooking for about seven minutes. Once done, transfer them to a bowl of ice water to cool. This will make peeling easier later on.
2: In a kitchen blender, combine the fresh breadcrumbs, chopped parsley, cilantro, chives, dried thyme, ground cumin and paprika.. Season generously with salt and pepper. Mix everything together until well combined.
3: Once the boiled eggs have cooled, gently peel them and set them aside.
4: In separate bowls, place the flour and the beaten egg. Dip each egg into the flour, ensuring it is evenly coated. Next, dip it into the beaten egg, allowing any excess to drip off. Finally, roll it in fresh breadcrumbs until it is thoroughly coated. Repeat this process for all the eggs.
5: Heat vegetable oil in a deep pan or a fryer to approximately 180°C (350°F). Gently lower each coated egg into the hot oil and fry until golden brown and crispy, turning occasionally to ensure even browning. This process should take about 3-4minutes. Once cooked, carefully remove the Scotch eggs using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
6: Allow the vegetarian Scotch eggs to cool slightly before serving. You can enjoy them warm or at room temperature. Cut them in half to reveal the beautiful contrast between the golden crust and the vibrant green herbs within.

These Are 10X Better Than Regular Deviled Eggs
I personally love a good deviled egg but the main problem I have with them is the lack of texture, it's just mushy on top of mushy. These eggs really fix that problem with flying colors.
Deviled Eggs Full Recipe:
12 eggs (save 2 for breading)
1/4 cup + 1 tbsp mayo
1/4 cup + 2 tbsp sour cream
2 1/2 tbsp mustard of choice (I used Savorra)
1 tsp Maldon salt
1/2 tsp black pepper
3 oz prosciutto deep fried
1/2 bunch chives finely sliced
1 dill pickle cut into little cubes
few sprigs of fresh dill
1/4 cup all-purpose flour
2 reserved eggs beaten
1 1/2 cups panko bread crumbs
10 sprigs of fresh thyme picked
3 sprigs of fresh or dried oregano
