How To make Scottish Eggs with Fresh Herbs
4 lg Eggs plain flour
8 oz Sausage meat 1 sm Egg, beaten
2 Spring onions, fine chopped Toasted breadcrumbs
1 ts Finely chopped fresh thyme Salt
3 ts Chopped fresh chives Freshly milled black pepper
1 tb Finely chopped fresh parsley Oil for deep frying
Hard-boil the eggs by covering them in cold water, bringing it to the boil, simmering gently for 9 minutes and cooling them under cold running water. Next mix the sausage meat with the spring onions and herbs and season well. Then shell the cooled eggs and coat each one with some of the seasoned flour. Divide the sausage meat into four portions and pat each piece out on a floured surface to a shape roughly 5x3 inches. Now place an egg in the center of each piece and carefully gather up the sausage meat to cover the egg completely. Seal one by one, first in beaten egg and then throughly and evenly in the breadcrumbs. Now heat 1 1/2 inches of oil in a deep frying pan up to a temperature of 350-375 F. Put the eggs into the oil and fry for 6-8 minutes, turning frequently until they have turned a nice broun colour. Drain on crumpled greaseproof paper. When they're absolutely cold, wrap in cling wrap and store.

2 slices wholemeal toast (400g loaf)

smoked salmon

Lightly whisk 2 eggs with some fresh chopped dill and seasoning.
Spray a non-stick pan with low-calorie cooking spray and add some halved cherry tomatoes and thinly sliced mushrooms, cook for 2-3 minutes to soften.
Add the herby egg mixture and continue to cook slowly until the eggs are scrambled to your liking.
Meanwhile, toast 2 slices of wholemeal bread (Healthy Extra ‘b’ choice). Spread some quark onto the toast, then spoon over the tomato and mushroom scrambled eggs.
Arrange slices of smoked salmon on top. Season to taste and serve.

Wild Double Duck Scotch Eggs Recipe
This Double Duck Scotch Egg recipe is a perfect way to use shot up duck or goose breasts. You can make a lot of substitutions here for the duck meat by using any type of dark game meat or of course domestic duck. The duck eggs can be substituted for chicken eggs, and even the spices and herbs can be altered quite a bit depending on taste. I recommend the following for the richest, duckiest version that anyone will love, whether they generally enjoy game meat or not.
Wild Double Duck Scotch Eggs Ingredient List
1 lb skinless wild duck breast meat
1/4 lb pork fatback
6 duck eggs
1 heaping tsp minced thyme
1 heaping tsp minced sage
1/4 tsp ground spice mix
(1 part white pepper, 1 part clove, 1 part cardamom, 1 part nutmeg, 2 parts ginger, 2 parts cinnamon-make a batch and keep sealed for future use in sausage, terrines or pate)
2 tsp kosher salt
1 tsp ground white pepper
1 C bread crumbs
1 C all purpose flour
1 qt vegetable oil for frying
Spicy mustard and pickles to serve with

How To Make Scotch Eggs

Watch along with our chef as he shows you how to make homemade Scotch eggs in this online culinary class. This dish is a great way to have fun with different European cuisines.
SCOTCH EGGS RECIPE:
Ingredients
8 large free-range eggs
2 eggs, beaten
1.5 lb sausage meat
1 small bunch of fresh chives
¼ cup fresh parsley chopped
1 tbsp ground English mustard
½ tbsp nutmeg
Sea salt
Freshly ground black pepper
Plain flour
6 oz white bread crumbs
Dipping Sauce
½ cup mayo
1 tbsp ground mustard
1/2 lemon juiced
Directions
1. Put 8 eggs into a pan of cold water and bring to the boil. Boil for 5 to 6 minutes, then transfer to a bowl of cold water. Once cooled, carefully peel them.
2. Put the sausage meat into another bowl with the herbs, nutmeg, mustard and pinch of salt and pepper. Mix together and divide into 8 balls.
3. Set up 3 plates for your breading station, one with a small hand full of flour, one with beaten eggs and the third with the breadcrumbs. Start by flouring your hands. In the palm of your hand, flatten the sausage ball into an oval shape patty. Roll a peeled egg into flour, then place in the middle of the patty. Gently shape the meat around the egg, molding it with your hands.
4. Roll the meat wrapped egg in the flour, shake off any excess, then dip into the beaten egg, followed by the breadcrumbs.
5. Heat the oil in a deep pan or fryer to about 325°F. Carefully lower the eggs into the pan and cook for about 4 minutes, turning them very so often, until golden. Removed with a slotted spoon and drain in kitchen paper.
6. Combine mayo, ground mustard and lemon juice to make the dipping sauce.
