Ingredients:
1 large Onion, chopped
2 Celery stalks, chopped
2 medium Carrots, diced
2-3 Garlic crushed, crushed
2 tablespoons Olive oil
1 teaspoon Cumin
1 teaspoon Dried oregano
1 teaspoon Paprika
Salt to taste
Pepper to taste
1 can (14oz/400g) Diced tomatoes/chopped tomatoes
8 cups (2L) Vegetable stock
2 cups (380g) Dried lentils, rinsed
2-3 tablespoons Parsley/coriander, chopped
2 tablespoons Lemon juice, fresh
Directions:
1. In a large pot heat olive oil, add chopped onion and sauté for 6-7 minutes, until slightly golden. Add chopped celery and diced carrots, cook for 4-5 minutes, until tender. Add crushed garlic, cumin, dried oregano, paprika and cook, stirring for 1 minutes.
2. Add minced/chopped tomatoes and cook for 1-2 minutes.
3. Add rinsed lentils, vegetable stock, salt and pepper. Bring to a boil over high heat, then, reduce the heat to low, cover with a lid, and simmer for 30-45 minutes. Check the seasoning and add salt/pepper if needed.
4. Add chopped coriander/parsley, lemon juice, give a quick stir and turn the heat off.
5. Serve!

مكونات
اغسل وانقع كوبين من العدس في الماء لمدة 30 دقيقة
في قدر نضيف البصل المفروم (250 جرام) مع القليل من زيت الزيتون ونقلبه حتى يتكرمل البصل
ثم تضاف المكونات التالية:
خمس فصوص ثوم (20 جرام).
كرفس (120 جرام)
حبتان من الجزر (150 جرام)
و ٣ حبات من الطماطم (٣٠٠ جرام)
يُصفّى العدس من الماء ويُضاف إلى القدر
ملعقة كبيرة من الكمون والكزبرة والفلفل الحلو وملعقة صغيرة من كل من الفلفل الأسود ورقائق الفلفل الحار
أوراق الغار
ملعقة صغيرة من كل من مرقة الملح والخضروات
عشرة أكواب من الماء الساخن
اطبخ الحساء على نار متوسطة لمدة 40 دقيقة
ثم أخرج أوراق الغار
يُمزج الحساء قليلاً
زينها بالكزبرة والبقدونس (10 جرام).
أضف القليل من قشر الليمون و 2 ملعقة كبيرة من عصير الليمون (30 مل) وبالعافية

Ingredients
Wash and soak two cups of lentils in water for 30 minutes
In a pot add the chopped onion (250 grams) with a little bit of olive oil and cook it until the onion caramelizes
Then add the following ingredients:
Five cloves of garlic (20 grams)
Celery (120 grams)
Two carrots (150 grams)
Three Tomatoes (300 grams)
Strain the water from the lentils and add it to the pot
One tbsp each of cumin, coriander, and paprika, and one tsp each of black pepper and chili flakes
Bay leaves
One tsp each of salt and vegetable bouillon
Ten cups of hot water
Cook the soup over medium heat for 40 minutes
Then, take out the bay leaves
Blend the soup slightly
Garnish it with coriander and parsley (10 grams)
Add a little orange zest and two tbsps of lemon juice (30 ml)

Greek Lentil Soup (φακές)

Get this recipe and more on my website:
1 pound dry lentils
2 carrots, peeled and diced
1 onion, diced
6 garlic cloves, chopped
¼ cup olive oil
15 ounces canned, pureed tomatoes
Salt and freshly ground pepper to taste
¼ teaspoon crushed red pepper flakes
1 teaspoon dried oregano
Fresh chopped parsley for garnish
Optional: feta cheese and toasted bread
Place the onions, garlic, carrots, and olive oil in a large pot. Cook for 15 minutes over medium heat until vegetables are tender.
Rinse the lentils with cool water until the water runs clear.
Add the rinsed lentils to the pot along with the salt, pepper, tomato puree, oregano, and 12 cups water.
Bring to a boil then reduce the heat to medium and cook for 35 minutes or until the lentils are tender.
Adjust seasoning to your preferred taste.
Add more water if needed.
Garnish with chopped parsley and serve with some feta cheese and warm hearty bread slices.
Once completely cool, this soup can be stored in the freezer for a month.
