How To make Southwest Quiche
9 lg Eggs
1 Prepared un-baked pie crust
-* 1/2 c Half-and-half
1/2 c Shredded cheddar cheese
1 md Yellow or vidalia onion
13 3/4 oz Canned artichoke bottoms
8 1/2 oz Canned cream-style corn
4 oz Canned chilies **
Butter Salt and pepper to taste Recipe by: Inn recipes * (refrigerated section of your grocery store) ** peeled, diced green chiles (preferably fresh or, if canned, Hatch, New Mexico brand)Pre-heat oven to 375 F. In a large mixing bowl, beat the eggs until light yellow and slightly foamy. Chop onion and sautee in butter until soft and yellow. Add chopped artichoke bottoms for the last few minutes. Pour into egg mixture. Add remaining ingredients and stir until well blended. Place pie crust into 10-inch straight-sided oven-safe quiche dish. (We use two with fluted sides.) Pull crust gently into place and flute with fingers. Pour egg mixture into dish. Bake for approximately 45 minutes until top is nicely brown and quiche does not "give" when pressed with a gentle finger. Serve hot, sliced into 8 pieces; or wrap tightly in plastic wrap, refrigerate and use as much as one week later. Serves 8.
NOTE This recipe can be made "guilt free" by substituting Egg Beaters, skim milk, low-fat cheese, non-creamed corn (drained), salt-substitute and margarine. Suggested accompaniments: Salsa (ours is home-made), any type of hot sauce (we serve both red and green Tobasco), sour cream and/or more green chile.JM. At The W.J. This Southwestern Quiche recipe brings the best of both worlds of Mexican food and quiche! Growing up in the great Southwest, I developed a love of foods with a Southwestern flavor. For this Southwestern quiche recipe, I used the ingredients I'd usually use for quiche and added ingredients that I would typically use in Southwestern food. The result is delicious! Southwestern Quiche is the perfect dish to bring to a brunch party! It also freezes beautifully!
INGREDIENTS:
- 1 roll Ready Made Pie Crust dough
- 1 cup cooked ground beef seasoned with your favorite taco seasoning
- 1 small can chopped green chiles
- 2 tbsp scallions chopped
- 1 cup Monterrey Jack Cheese shredded
- 4 eggs
- Approximately 1 cup half & half
- 1/2 to 3/4 tsp salt to taste
- 1/4 tsp pepper
INSTRUCTIONS:
1. Preheat oven to 375°F.
2. Place pie crust in uncreased 9-inch pie plate.
3. Fold edges over and press edges with a fork. Then, poke all over crust dough with a fork to vent. 4. Partially bake at 375°F for 10 minutes.
5. Prepare taco meat according to instructions on taco seasoning package. Set 1 cup aside for recipe.
6. In a large measuring cup, break 4 eggs. Pour half and half on top of eggs until the mixture measures 2 cups. Transfer to a bowl and mix with wire whisk.
7. Place taco meat at the bottom of pie crust. Add green chiles, scallions, salt, pepper, and 3/4 cup of the cheese of the cheese. Set aside approximately 1/4 cup of the cheese.
8. Pour custard (egg and half and half mixture) over the meat, most of the cheese and vegetables until pie is almost full. Sprinkle remaining 1/4 cup cheese over the top.
9. Bake at 375° F for 30-35 minutes. You’ll know when the quiche is done by poking the middle with a knife. If the knife comes out clean, the quiche is ready!

Whoever said, Real men don't eat quiche never tried these! They are the perfect size, perfectly flaky, and personalized perfection. (Let me explain.) The beauty of the mini quiche is that you can very easily accommodate different eating styles. Is someone gluten free? No problem...make fewer crusts. How about a vegetarian? Just make sure to load them up on veggie ingredients and skip the meat. There are even options for possibly picky preschoolers......ham and cheese only. So this is a great dish for groups with different eating preferences. It could work as a breakfast or brunch, but the quiches also work as a fun appetizer as they doesn't require any utensils. I was pleasantly surprised with how easy it was thanks to a ready made pie crust, and they turned out wonderfully flaky. The only labor intensive part was chopping up the toppings, but that's where you get the rest of your family involved. Kids would enjoy helping cut out the circles for the crusts too. So get your whole family together for brunch this Christmas and give them something they definitely won't want to return! Merry Christmas.
Ingredients:
Pie crusts cut into 4 inch circles
4 eggs
1 cup whole milk
Ham
Broccoli
Green Pepper
Tomatoes
Cheese
Mix eggs with milk until creamy
Fit pie crusts into muffin tins
Add ingredients
Pour egg mix
Top with choice of cheeses: Cheddar or Pepperjack
Bake at 375 °F fro 25 to 30 minutes

How to make a breakfast quiche loaded with vegetables and flavor!~
Ingredients:
1-2 Tablespoons Olive Oil
2 Large Potatoes, Cubed
1 Jalapeño, Chopped Small
1/2 Cup Onion, Chopped Small
9 inch Refrigerated Pie Crust
6 Large Eggs
3/4 Cup Milk
1/2 Teaspoon Cumin
1 Teaspoon Oregano
1 Teaspoon Parsley Flakes
1 Teaspoon Rosemary
1/4 Teaspoon Black Pepper
1 Teaspoon Salt
1 Teaspoon Minced Garlic
1 Small Tomato, Chopped
Shredded Cheese
Directions:
1. In a large skillet, add the oil and potatoes. Cover and cook, stirring occasionally, about 5 minutes or until almost tender. Add the jalapeño and onion. Continue to cook until potatoes are tender and onion is translucent. Remove from heat, set aside.
2. Roll out a refrigerated pie crust. Carefully place into the bottom of a 9 or 10 inch pie pan. Carefully crimp the edges of the crust. Using a fork, poke holes into the bottom and sides of the crust. Weigh down the crust using pie weights or by placing a smaller foil pie or cake pie onto the crust, then weigh it down with an oven safe bowl. Bake in a preheated oven at 450F for 10 minutes until lightly golden or follow the package instructions for crust baking.
3. Carefully remove the weight in the pie crust. Spoon the cooked potatoes into the crust.
4. In a bowl, whisk together the eggs, milk, and next 8 ingredients. Pour over the potatoes, making sure they are completely covered and submerged in the egg mixture. Bake at 350F for 30-35 minutes or until set. Top with shredded cheese in the last 5 minutes of baking and allow to melt. Serve warm.
