This recipe is from my Mom's piano teacher in the 1980s - she made them for all of the piano recitals she did. They're super delicious and easy to make!
Ingredients: 1 cup sugar, 1 cup light corn syrup, 6 cups Special K cereal, 1.5 cups peanut butter, 1 cup butterscotch chips, 1 cup chocolate chips

In this episode I show how to make my favorite cookie, Special K cookies. They are no bake cookies that are easy and a lot of fun to make. Plus they are very very delicious! Enjoy!!
How to Make Chewy Cereal Cookies #WithMe | At Home Recipes | Allrecipes.com
These easy, light, and fluffy cookies are made with coconut and cereal! Get the recipe:
Ingredients:
2 egg whites
1 cup white sugar
2 cups high-protein crisp rice and wheat cereal (such as Kellogg's® Special K®)
1 cup flaked coconut
1 teaspoon vanilla extract
Directions:
Step 1
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
Step 2
In a clean and dry glass or metal bowl, beat egg whites until soft peaks form. Gradually add sugar while continuing to whip until stiff peaks form. Fold in cereal, coconut and vanilla. Drop by heaping spoonfuls onto the prepared cookie sheets.
Step 3
Bake for 15 to 20 minutes in the preheated oven, until firm. Allow to cool completely before removing from cookie sheets.

Makes about 25 cookies
Ingredients:
1 cup (230g) Butter, softened
2 cups (250g) Flour
2/3 cup (85g) Powdered sugar
Optional additions:
Vanilla extract
Salt
Sugar for coating
Directions:
1. Preheat oven to 350F (180C). Line a baking tray with parchment paper, set aside.
2. In a large bowl cream together the butter and powdered sugar until light and fluffy. Add the flour and mix until combined. If the dough is too soft, add 2-3 tablespoons of flour
3. 2 ways to shape the cookies:
A. Shape the dough into a disk form, wrap in plastic wrap and refrigerate for 1 hour. Then, roll out the dough into 1/4-inch (1/2cm) thick. Then, cut into desired shape (hearts, round, rectangle).
B. Roll the dough into a log shape, wrap it with plastic wrap and freeze for 30 minutes. Then, unwrap and slice the log into 1/4-inch (1/2cm) thick slices.
4. Transfer the cookies to the baking tray and bake for 12-15 minutes, until slightly golden.
5. Allow to cool.
Notes:
• Cookies can be stored in an airtight container up to 3 days.
• If the cookies are too soft, refrigerate for 30 minutes before baking
