Spicy Corn Black Bean and Feta Salad | BBQ Season | Amused Bouche
One of the most important things to any barbecue... is it the burgers? Is it the beef brisket? No! it's the salads. Over the next three days i'm going to bring you three different salads. All of them i've taken from the BBC Good Food website for inspiration.

The Perfect Summer Dish ☀️???? Black Bean & Corn Salad ????????????????
You can make this salad a day in advance to bring to your weekend get together or perfect for a weeknight. It's vegan so you won't have to worry about keeping it under constant refrigeration while you're out enjoying the sunshine!
Black Bean & Corn Salad
2 15oz. cans Black Beans, rinsed & drained
1 16oz (1lb) package frozen Corn
1 bunch Green Onions, thinly sliced
½ Large Red Onion, small dice
1 Red Bell Pepper, small dice
2 Jalapenos, seeded, fine dice
1 bunch Cilantro, chopped
Dressing:
Juice of 2 Limes, approximately ¼ cup
½-2/3 cup Extra Virgin Olive Oil
1 ½ teaspoons Cumin Seed, toasted (dry frying pan on medium heat, until fragrant)
2 cloves Garlic, minced
1 teaspoon Kosher Salt
1 teaspoon Black Pepper
Combine salad ingredients together in large bowl.
For dressing: Whisk together lime juice, garlic, cumin, salt & pepper. Slowly drizzle in EVOO while whisking until emulsified. Stop after you’ve added ½ cup of EVOO & taste. Adjust salt/pepper to taste & drizzle in the remaining EVOO as needed.
Add to salad & mix well. Cover & refrigerate at least 2 hours so flavors can marry. This salad is perfect to make a day in advance. Remove from fridge about 15 minutes before serving

How to Make Corn and Black Bean Salad Dip for hot SUMMER days!
(FULL RECIPE BELOW) Let’s make the most of summer by serving the most easy and delish Black Bean and Corn Salad ever with a creamy dressing made with NESTLÉ® MEDIA CREMA®!
This is a quick and easy, no cook side dish that pairs well with grilled meats or can be served as a dip with tortilla chips. Yum, right? All you have to do is mix the vegetable ingredients with a creamy salad dressing, and then serve chilled. This corn salad with black beans will become one of your go-to healthy corn recipes for summer.
BLACK BEAN AND CORN SALAD RECIPE
Ingredients:
2 cans black beans, drained and rinsed
1 1/2 cups canned corn kernels, drained and rinsed
1/4 cup red onion, minced
1 red bell pepper, diced
1 avocado peeled, pit removed and diced
1 jalapeno (ribs and seeds removed), then minced
1/4 cup NESTLÉ® MEDIA CREMA®
1/4 cup mayonnaise
1/4 cup lime juice
2 teaspoons honey
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
Yellow corn tortilla chips (to serve salad with)
Directions:
1. In a large bowl, add the black beans, corn, red onion, red bell pepper, avocado, and jalapeno. Reserve!
2. In a small bowl, whisk together the Media Crema, mayo, lime juice, honey, chili powder, cumin, and salt and pepper until obtaining a homogeneous, creamy mixture. Then stir in the chopped cilantro with a spoon.
3. Pour the dressing over the reserved vegetable mixture and toss gently to coat.
Serve with corn tortilla chips and enjoy!

Spicy Mexican Salad Recipe:
Sauce:
Red Chilli Sauce - 2 tbsp
Tomato Ketchup - 2 tbsp
Lemon Juice - ½ no.
Olive Oil - 1 tbsp
Jalapeno (finely chopped) - 2 tbsp
Salt - ¼ tsp
Coriander Leaves (finely chopped) - 1 tbsp
Salad:
Sweet Corn Kernels (boiled) - 1 Cup
Rajma (boiled) - 1 Cup
Onion - 1 no.
Green Capsicum - 1 no.
Tomato - 1 no.
Black Olives - 2 tbsp
Tortilla chips (crushed) - ¼ Cup + For Garnish
Coriander Sprigs - For Garnish
Sour Cream - 1 tbsp
Cooking Instructions:
1. Combine and whisk together the ingredients for the dressing.
2. For the salad, combine the ingredients in a bowl. Pour over the dressing and gently combine.
3. Plate the salad, add a dollop of sour cream and top with crushed tortilla chips and coriander sprigs.
