How To make Spinach Fettucine with Ginger Chicken
Ingredients
FOR THE MARINADE/DRESSING:

cup
shallots, chopped
1
each
garlic, clove, chopped
1/8
teaspoon
red pepper flakes, crushed
1
teaspoon
thyme, dried
2
teaspoon
lime, juice, freshly squeezed
1
tablespoon
mustard, dijon-style
2
tablespoon
soy sauce, reduced-sodium
2
tablespoon
vinegar, rice wine
1/4
cup
wine, dry, white
2
teaspoon
honey
3
tablespoon
ginger, fresh, grated

chicken, breast, boneless, skinless
8
oz
spinach fettucine, dried
1/2
cup
stock, chicken, fat skimmed off
1
each
squash, yellow, trimmed, cut into matchsticks
1
each
bell pepper, red, trimmed, cut into strips
1
each
leek, white part only, trimmed, cut into 1 inch half rounds
2
cup
broccoli, florets
1
cup
mushrooms, chopped
1/4
cup
chives, fresh, snipped
Directions:
Preheat oven to 350 degrees. Put all the marinade/dressing ingredients in a blender and mix thoroughly at low speed.
Place the chicken in a shallow baking dish. Pour half of the mixture from the blender over the poultry, reserving the remainder. Cover and refrigerate the chicken for 20 minutes.
While the chicken is marinating, bring a large pot of water to boil over high heat. Add the fettucini and cook for 8 to 12 minutes, to desired doneness.
In the meantime, remove the chicken from the refrigerator. Uncover the baking dish and transfer it to the oven. Bake for 15 minutes, until the meat is no longer pink and the juices run clear.
When the pasta is cooked, remove the pot from the heat. Drain the fettucini and return it to the pot. Stir in the chicken stock and keep the mixture warm over the lowest heat setting. Pour the cooking juices from the chicken into a saute' pan. Add the squash, bell pepper, leek, broccoli and mushrooms. Saute for about 3 minutes, just until the vegetables begin to wilt.
Transfer the pasta to a warm serving bowl, along with the vegetables. Shred the chicken on top. Add the reserved dressing and toss. Garnish with the snipped chives.

Here are the ingredients and steps to make this recipe!
1 bunch Spinach, blanched and pureed to yield 1 cup
3 lbs bone in Chicken pieces
1 – 2 tbsps Mustard Oil
1 – 2 tbsps Regular Oil
1 cup finely chopped Onion
1 tbsp each Ginger & Garlic paste
1 tsp each Chilli powder, Turmeric, Cumin & Coriander powder
2 cups diced Tomatoes
Salt to taste
1 tsp each Garam Masala & Kasuri methi
Blanch the spinach in some hot water and drain and leave aside to cool
In a saute pan, heat up regular oil, together with the fragrant mustard oil
Add one cup of finely diced onions and saute
Allow this to caramelize then add 1 tbsp of ginger paste followed by 1 tbsp garlic
Stir and cook to remove the raw Ginger and Garlic taste
Add 1 tsp each Chilli powder, Turmeric, Cumin & Coriander powder
Mix well to allow the spices to warm up
Add 2 cups diced tomatoes & some salt
Cover and allow to cook till mushy and it forms a thick paste
Stir at intervals to prevent burning
Add the chicken and fold in to coat in the gravy
Puree the cooled Spinach
Cover and cook and stir at intervals for about 20 – 30 mins till the chicken nice and tender
Add one tsp of Garam masala and Kasuri methi or dried fenugreek
Add the spinach puree in and fold in
Let this simmer for a few more minutes and it’s ready to eat with rice or rotis

300 Grams Tomatoes
100 Grams Leeks
560 Grams Spinach
200 Grams Carrots
30 Grams Ginger
1 Onion

Ever since we were little, chicken fettuccine alfredo has been our favorite pasta dish. Rich and creamy, the sauce is absolute perfection, and we just can’t get enough. Nowadays we try to order it a little less frequently, since it’s definitely not health food, but there are ways to get that delicious flavor we know and love without allll the calories.
We give you: the spinach chicken alfredo skillet. That’s right, not only did we transform this dish into a skillet dinner that omits the pasta (although we would totally understand if you decided to serve this with penne pasta…) and introduces some more veggies into the mix, courtesy of spinach and tomatoes. Perfect for a family dinner, this recipe is seriously tasty and won’t leave anyone feeling stiffed by the lack of fettuccine. You’ll see; one bite of this and you know you’ll be making it again soon!
