How To make Strawberry Cheesecake Ii
18 Zwieback crackers, crushed
3 T Butter or margarine, softend
1 T Sugar
16 oz Cream cheese
-at room temperature 1/2 c Sugar
2 Egg yolks
1 t Grated lemon peel
1 T Lemon juice
2 Egg whites, stiffly beaten
1 c Commercial sour cream
2 T Sugar
1 t Vanilla extract
16 oz Frozen strawberries or
1 pt Fresh strawberries,
-washed and hulled 1. Lightly grease a 9-inch, heat-resistant, non-metallic baking
dish. 2. In a small bowl combine cracker crumbs, softened butter or
margarine and the 1 tablespoon of sugar. Press into the bottom of a greased baking dish. 3. Heat, uncovered, in Microwave Oven 2 minutes. Set aside.
4. In a large mixing bowl, beat cream cheese and the 1/2 cup
sugar together until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Beat in lemon peel and juice. 5. Fold in stiffly beaten egg whites. Pour into prepared baking
dish; smooth with a spatula. 6. Heat, uncovered, in Microwave Oven 6 minutes.
7. In a small bowl combine sour cream, the 2 tablespoons sugar
and vanilla until well blended. Carefully spread over top of cheesecake. 8. Heat, uncovered, in Microwave Oven 1 minute.
9. Arrange strawberries on cheesecake as desired and chill
several hours before serving.

8 oz Fresh Thin-Sliced Strawberries
1 Strawberry Sauce Recipe, strained and chilled

Ingredients:
For the base:
400g (14.1oz) biscuits/ graham cracker
2/3 cup (150g) butter, melted
For the filling:
300grams (10.5oz) strawberries
600g (21.1oz) cream cheese (room temperature)
2 cups + 1tbsp (500ml) heavy cream
1.25 cups (150g) powdered sugar
1 teaspoon vanilla extract
18 grams gelatin powder
90ml cold water
For the topping:
300g (10.5oz) strawberries
3 tablespoons (37g) sugar
10 grams gelatin powder + 50ml cold water
100ml water
Directions:
1. To make the crust: In a food processor, process biscuits until fine. add melted butter and process again until combined. Press onto bottom of 24cm/9-inch springform pan. Refrigerate while preparing filling.
2. To make the filling: Whisk together the gelatin and the cold water in a small bowl, set it aside to let the gelatin absorb the water.
3. In a bowl of stand mixer place the cream cheese, powdered sugar and vanilla extract. beat until smooth. Gradually add heavy cream and beat until incorporated.
*Note: In the video I'm using flat beater to beat the cheese mixture. it's better to use a balloon whisk for better results.
4. Melt the gelatin in the microwave for 15 seconds. Pour the gelatin to the cheese mixture. Beat until incorporated and starts to thicken.
5. Cut the strawberries in half and arrange them around the edges of the pan. Try to use similar size strawberries. Pour the filling into the pan. Place in the freezer while making the topping.
6. To make the topping: in a small bowl whisk gelatin and cold water. Set aside for 5-10 minutes. In small saucepan place strawberries, sugar and water. Cook over medium-high heat until the sugar is dissolves and simmer for 5 minutes. Puree the strawberries with a hand blender until very smooth (to get darker red color add few drops of red food coloring). Let cool 5 minutes and add the gelatin. Stir until the gelatin is melted and incorporated. Let cool to room temperature and pour over the cake.
7. Refrigerate the cake overnight.

Crust bananay ke ajza:
Digestive biscuit 2 cups
Nestle milk pack unsalted dairy butter (pighala huwa) 1 cup
Cream cheese mixture bananay ke ajza:
Nestle milk pack whipping cream 2 cup
Cream cheese 2 cup
Peesi cheeni 1 cup
Gelatin mixture (gelatin 1 ½ khanay ka chamach + garam pani 2 khanay ke chamach)
Strawberry topping bananay ke ajza:
Strawberry (katti hui) 2 cup
Cheeni 1 cup
Slurry (cornflour 1 ½ khanay ka chamach+ pani 2 khanay ke chamach)
Tarkeeb:
1. Crust banana ke liye aik grinder me digestive biscuit daal kar achi tarhan grind kar len. ab is me makhan daal kar dubara grind karlen.
2. Ab is mixture ko cake walay mold me daal kar neechay achi tarhan barabar phela len.ab issay 10-15 mins ke liye refrigerator me rakh den.
3. Cream cheese mixture bananay ke liye aik bowl me nestle whipping cream achi tarhan phent len or topping ke liye adha cup whipping cream bacha len.
Note: cream ko raat bhar fridge me thanda karen or electric beater se achi trahan phent len.
4. Ab baki bachi hui whipped cream me cream cheese or icing sugar daal kar dubara achi tarhan phent len. ab is me gelatin mixture daal kar achi tarhan fold karlen.
5. Ab is mixture ko tayar crust ke upar achi tarhan phela len or 6-8 ghantay yan raat bhar ke liye freezer me rakh den.
6. Strawberries topping bananay ke liye aik pan me cheeni or strawberry ko achi tarhan garam karen or is waqt tak pakayen jab tak cheeni phighal na jaye or strawberries naram na hojayen.
7. Ab is me slurry daal kar aik minute tak pakayen.or issay kamray ki darja hararat par thanda honay den.
8. Phir is strawberry topping ko tayar cheese cake par dalen.or 2 ghantay ke liye refrigerate karlen.
9. Mazedaar Strawberry Cheese Cake tayar hai.

Ingredients for Crust:

Nestlé MilkPak Unsalted Dairy Butter (melted) 1 cup
Ingredients for Cream Cheese Mixture:
Nestlé MilkPak Whipping Cream 2 cups
Cream cheese 2 cups
Icing sugar 1 cup
Gelatin mixture (gelatin 1 ½ tbsp. + hot water 2 tbsp)
Ingredients for Strawberry Topping:
Strawberries (sliced) 2 cups
Sugar 1 cup
Slurry (corn flour 1 ½ tbsp + water 2 tbsp)
Directions for Crust Preparation:
1. In a grinder add digestive biscuits and grind them. Add butter and grind again until fully mixed.
2. Add this mixture to a cake mold. Spread it evenly at the base and refrigerate for 10-15 mins.
Directions for Cream Cheese Mixture Preparation:
3. In a bowl add Nestle Whipping Cream and beat until fluffy and stiff peaks form. Reserve 1/2 cup of whipped cream for topping.
Note: Chill the cream overnight in the fridge and whip it with an electric beater.
4. In the remaining whipped cream add cream cheese, icing sugar and beat it again.
5. Add gelatin mixture and fold with a spatula.
6. Add this mixture to the prepared crust in the cake mold and spread evenly.
7. Refrigerate for 6-8 hours or overnight.
Directions for Strawberry Topping Preparation:
8. In a pan heat sugar and strawberries. Cook until the sugar melts and the strawberries get soft.
9. Add slurry and cook for a minute.
10. Let it cool at room temperature.
11. Pour this strawberry topping over the prepared Cheese Cake and chill in the refrigerator for 2 hours. Serve your Strawberry Cheesecake and enjoy.
