Just grab your favorite protein (any protein will work!), grab a Bearded Butcher DIY brat kit, and get started! Good brats end up around 80/20, so you can add some fat if your protein is a little too lean. Today, you'll see Georgia Peach, Mango Tango (sweet and spicy), Jalapeno Cheddar, and a little homebrew Mushroom and Swiss. Mushroom and Swiss is the encouragement to experiment at home with your favorite flavors!

Menchi-katsu Recipe (Deep-Fried Breaded Ground Meat) | Cooking with Dog

Let’s grind sliced meat to make Menchi-katsu, deep-fried breaded ground meat. Fresh and crispy Menchi-katsu with homemade ground meat is absolutely delicious!

How to Make Menchi-katsu


(serves 2)
100g Thin Beef Slices (3.5 oz)
60g Thin Pork Slices (2.1 oz)

100g Onion (3.5 oz)
½ Beaten Egg
3 tbsp Nama-Panko - Soft Bread Crumbs
¼ tsp Salt
Pepper
Nutmeg
½ tbsp Tomato Ketchup
1 tsp Japanese Worcestershire Sauce

100ml Cake Flour or substitute all purpose flour (3.5 fl oz)
½ Beaten Egg
600ml Soft Bread Crumbs (2.5 cups)

Vegetable Oil: 170°C, 1.5cm deep / 340°F, 0.6 inch deep

- Menchi-katsu Sauce -
1 tbsp Tonkatsu Sauce
1 tbsp Japanese Worcestershire Sauce
1 tbsp Tomato Ketchup
1 tbsp Hot Water

- Side Vegetables -
Shredded Cabbage Leaves
Baby Salad Greens
A Thin Tomato Wedge

BEST Minced Beef Hot dog recipe EVER

Check out my version of mince beef hot dogs. This is the most delicious hot dog you will ever have. You are welcome !!!

ingredients
1. Beef mix

Mince beef
Salt
Onion
paprika
Parsley
Black pepper
Garlic paste
Flour (Preferable bread crumbs)

2. Pineapple salsa

Fresh pineapple
Oil
Red onion
Fresh parsley
Scotch bonnet
Green bell pepper
Salt & Black pepper

3. Dressing

Greek yoghurt
Olive oil
Salt
Black pepper
Mint leaf
White vinegar (Preferable lemon juice)

IMPORTANT NOTES
1. Use breadcrumbs instead of flour. It holds the beef firmly. I didn’t have bread crumbs hence my substitute.
2. Adding oil on my palm prevents the beef from sticking to my palm.
3. Marinade the beef sausage for as long as you can in the fridge
4. Ensure to grill your pineapple to give it a nutty/charred taste. It takes the snack to a whole new level.
5. I had to re-roll my sausages to be longer and thinner so they can fit properly into the bun. However if it is thick, you can cut it into smaller pieces and place into the bun.
6. garnish with mint. Beef, yogurt, pineapple and mint are match made in heaven.

In the cold season, let’s make hot Cabbage Rolls to help us keep warm and relax. The cabbage simmered on low heat is so tender and sweet!

How to Make Cabbage Rolls


(serves 4 | 8 pieces)
200g Ground Beef and Pork, or single ground meat (7.1 oz)
1/2 tsp Salt
Pepper
20g Panko, Japanese breadcrumbs (0.7 oz)
3 tbsp Milk
1 Egg
70g Onion, chopped (2.5 oz)

1 Cabbage, 1.6kg/3.5 lb per cabbage

1 package of Tomato Sauce, 295ml/1.25 cups per package
250-300ml Hot Water, until cabbage rolls are submerged (1.06-1.27 cups)
30g Bacon, sliced, 5mm/0.2 strips (1.1 oz)
1 Bouillon Cube, 5.3g/0.2 oz per piece

1 Bay Leaf
Salt
Pepper
Parmesan Cheese, grated
Parsley Leaves, chopped

キャベツ：1玉(今回使用したのは1.6kg)

トマトソース（市販）：１袋（295ml）
湯：250〜300ml(ロールキャベツが浸かる量で鍋により異なります)
ベーコン（薄切り5mm幅）：30g
ブイヨンキューブ(刻む)：1個(約５g)
