How To make Sunshine Orange Cake
1/3 c Reduced-calorie margarine,
-melted Brown sugar substitute to = 1/4 c Brown sugar
Sugar substitute to = 1/4 c Sugar
1 Egg
1 1/4 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1/4 ts Ground cinnamon
1/3 c Raisins
2/3 c Unsweetened orange juice
Vegetable cooking spray Combine margarine, sugar substitutes, and egg; beat at high speed of an electric mixer 2 minutes. Combine flour, baking powder, soda, and cinnamon, stirring to blend. Stir in raisins. Add flour mixture to creamed mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed of an electric mixer after each addition. Spoon batter into an 8-inch square baking pan coated with cooking spray. Bake at 350 degrees for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cut into squares to serve. Makes 9 servings. Nutritional information per serving: calories - 118, protein - 3 gm., fat - 3 gm., carbohydrates - 19 gm, cholesterol - 30 mg., fiber - trace, sodium - 257 mg. Orange Sunshine Spring Cake, Part 1
This makes a nice spring cake. The ingredients are:
2 cups white, or unbleached flour, 1/2 tsp. salt, 1 Tbsp. baking powder,
1 and 1/4 cups white sugar, 1 cup orange juice, 3 eggs, 1/2 cup vegetable oil. Mix flour, salt and baking powder, in anotheror bowl, mix sugar, orange juice, eggs and oil. Add wet ingredients to dry, mix well. Pour into cake pan and bake at 350 o F. for 40 minutes. Enjoy!

Ingredients :
For orange syrup
- Orange 1 ea. (slices)
- Water 250 ml.
- Caster sugar 100 g.
For orange cake
- All purpose flour 150 g.
- Baking powder 3/4 tsp.
- Salt 1/4 tsp.
- Unsalted butter (room temperature) 120 g.
- Caster sugar 100 g.
- Orange zest 1 tbs.
- Eggs (room temperature) 2 ea.
- Orange juice 90 ml.
For orange glaze
- Orange syrup
- Orange juice 70 ml.
- Orange zest 1 tbs.

How to cook:
1. Preheat oven to 170°C (350°F) with upper and lower heat.
2. Zest and juice 2 oranges. Slice one orange (skin on) thinly.
3. Make the syrup: Combine water and sugar in a pan. Heat over low heat, stirring until sugar dissolves. Add orange slices and simmer for 10 minutes. Let cool.
4. Make the batter: In a bowl, whisk together flour, baking powder, and salt. Set aside.
5. In another bowl, whisk together sugar and orange zest until light orange.
6. Cream the softened butter, then add the sugar-zest mixture and whisk until combined.
7. Add eggs one at a time, whisking until combined after each. Stir in orange juice.
8. Gradually fold in the dry ingredients until just combined.
9. Lightly grease baking cups (ramekins or muffin tins) and fill each with orange syrup slices. Pour batter over the syrup, filling cups about 80% full.
10. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
11. Let cakes cool slightly in the pan.
12. Make the glaze: While cakes cool, combine leftover syrup, orange juice, and zest. Bring to a boil, then set aside.
13. Once cakes are cool enough to handle, carefully invert them onto plates.
14. Brush the tops with the warm orange glaze for a beautiful shine.
