6 oz Semisweet chocolate chips
2/3 c Condensed milk
1 c Chopped nuts
= (your favorite) A pinch of salt 1 ts Vanilla extract
1 sm White chocolate
Preheat oven to 350 degrees. Heat chocolate chips and milk together in top of double boiler oversimmering water and beat until smooth. Remove from heat. Stir in nuts, salt and vanilla. Drop by tablespoonfuls onto well-greased cookie sheet. Press a chunk of white chocolate into center of each, pressing to bottom of dough. With fingers, cover white chocolate with cookie dough. Sporty Confetti Cookies Recipe

Ingredients
Cookie Dough:
2 cups flour
¼ tsp salt
½ tsp baking powder
½ cup unsalted butter
1 cup sugar
1 egg
2 tbsp milk
½ tsp vanilla extract
several drops of your desired flavoring from Wilton Treatology Flavor System (I used Sweet Myer Lemon)
Royal Icing:
½ lb confectioner’s sugar
2 ½ tbsp meringue powder
scant ¼ cup water
Wilton Color Right System food coloring
Wilton Sports Set sprinkles
Wilton Autumn Mix sprinkles
Wilton Jumbo Confetti sprinkles
Wilton FoodWriter Edible Color Markers, in black and red
Directions
Bake the cookies:
1. Mix the flour, salt and baking powder in a bowl. In a separate bowl, beat the butter and sugar with an electric mixer until pale and fluffy. Add the egg, milk, vanilla extract and a couple drops of Wilton Treatology Flavor System. I used the Sweet Myer Lemon flavor, which gives the cookies a delicious, creamy lemon flavor.
2. Shape the dough into a disk and refrigerate for 1 hour.
3. Roll the dough out on your work surface with the Wilton French Rolling Pin. Use a 3” circle cookie cutter to cut out rounds. You will need 3 circles per cookie. To make a football shape, lightly press the round cookie cutter into the dough to make a faint circle shape. Use a sharp knife to extend past the circle on both sides to create a football shape.
4. Line a Wilton baking sheet with parchment paper and arrange the cookies about 1 inch apart. Use a sharp knife to cut the centers out of 1/3 of the cookies.
5. Bake the cookies at 350F for 10 minutes, until the edges are just starting to turn golden. Allow the cookies to cool completely.
Make the royal icing:
1. Combine the confectioner’s sugar and meringue powder in a large bowl. Add the water and beat with an electric mixer until the icing stays on the surface for a few seconds when drizzled, about 5-7 minutes.
2. Divide the royal icing into 3 bowls and dye it orange and brown, leaving the remaining bowl white. Using Wilton’s Color Right system will give you the most vibrant colors while using very little food coloring. This is the only food coloring I use in my recipes and I love it!!
3. Place the royal icing into piping bags fitted with a small, round piping tip (#2 or #3).
Decoration and assembly:
1. Pipe some royal icing onto the bottom of the center-less cookies and stick them to the corresponding whole cookies. The royal icing will act as a glue to stick the layers together!
2. Fill the centers of the cookies with the adorable Wilton sprinkles. I liked to correspond the sprinkle filling with the outside design of the cookie, so I put football sprinkles into the football cookies and so on. To celebrate the fall and make them extra seasonal, I also added some fall sprinkles into the cookies. I used the Jumbo Confetti sprinkles in the basketball cookies because I loved how they looked with the little basketball sprinkles!
3. Pipe some more royal icing onto the border of the top cookie and place another whole cookie on top.
4. Fill in the surface of the cookies with royal icing. Don’t worry about the details – we’ll fill those in later!
5. Allow the cookies to sit at room temperature for about an hour, or until the royal icing has fully dried and hardened.
6. Use Wilton’s FoodWriter Edible Color Markers to draw stitches and details onto the cookies.
7. Then simply bite into the cookies and enjoy!
