1 cup of granulated sugar (200 g)
2 eggs
7 oz (200g) of unsalted butter (softened)
3 cups and 2 tablespoons of all-purpose flour
3 teaspoons of baking powder
2 teaspoons of vanilla sugar or vanilla extract. (check out our homemade vanilla sugar here ►
10 drops of bitter almond aroma for cookies.
3-4 tablespoons of milk for brushing the cookies before baking.
Nib sugar (pearl sugar) for topping before baking. You can find it on Amazon ►
Bake at 400 F /200C for about 7 minutes or until golden brown on the edges.

Homemade Vanilla Almond Cookies Recipe - Perfect for Any Occasion!

Ingredients:
1 cup unsalted butter room temperature (8 ounces) (226 gr)
1/2 cup granulated sugar (100 gr)
2 tsp pure vanilla
3 egg yolks
1 cup almond flour/meal (125 gr)
2 cups all purpose flour (280 gr)
1/2 tsp baking powder
1/4 tsp salt
1 cup confectioners sugar (10X sugar)
Directions:
Step#1- Using a stand up mixer or handheld mixer cream the butter with the sugar until light and fluffy. Usually about 4 minutes. Add vanilla and egg yolks one at a time. Let it get absorbed before adding next one. Lower speed and add almond flour. Continue mixing.
Step#2- Combine flour, baking powder and salt.
Step#3- Sift into mixture and mix until dough forms. If you’re using handheld mixer you can do this last part by using a spatula. Once dough is formed cover with plastic wrap and chill in refrigerator for at least one hour.
(This dough can be made ahead and also frozen).
Step#4- Use a one tablespoon size ice cream scooper to scoop each cookie. Roll between your hand as if you were rolling to make meatball round and round. Then move your hands front to back creating a roll. Fold the tips forward making a crescent.
Step#5- On a parchment paper lined cookie sheet space each cookies about 1 1/2 inches apart. Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 10 minutes or until tips are golden.
(Don’t overcook).
Step#6- Let them cook about 10 minutes before coating in confectioners sugar.
Step#7- Coat each cookie and finish cooling on rack.
(Dust more confectioners sugar before serving).

Ingredients
1 3/4 cup flour
2 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 cup sugar
1 egg
1/2 tsp almond extract
Milk
1/2 cup sliced almonds (can coarse chop)
Stir flour, BP, salt and set aside. Beat or whisk butter. I usually melt mine so don’t have to. Add egg and almond extract, stir some more. Add flour mixture, beat (or stir) until well mixed. Divide dough into fourths. Form each into 12”(?) rolls. Flatten. Place each 2-4” apart. Brush with milk and add almonds if desired. Bake 325 degrees 20-22 minutes. May want to cool before drizzling with icing. - 1 cup powdered sugar, 1/4 tsp almond extract, 4-5 tsp milk to make icing of drizzling consistency.

Ingredients
4 Tablespoons unsalted butter
1/2 cup light brown sugar firmly packed (100g)
1/4 cup granulated sugar 50g
1/4 cup light corn syrup 60ml
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup all-purpose flour 31g
2/3 cup finely chopped almonds¹ 90g
Instructions

00:17 Preheat oven to 350F and line cookie sheet with parchment paper.
00:22 In a medium-sized saucepan, combine butter, sugars, and corn syrup.
00:45 Cook over medium heat, stirring constantly, until sugar has melted and mixture just begins to boil.
01:13 Once boiling, remove from heat and stir in vanilla extract, salt, flour, and finely chopped almonds, stirring until completely combined.
02:18 Allow to cool for five minutes, then drop by 1 ½ teaspoon onto prepared cookie sheet, spacing cookies at least several inches apart (cookies will spread quite a bit in the oven, so give them some space!).
02:57 Bake on 350F for 9 minutes, rotating halfway through baking. You can usually tell the cookies are finished baking when they stop bubbling and are a light golden brown in color. Keep an eye on them because they can burn quickly.
