How To make Sweet/Sour Meatballs
1 1/2 lb Ground beef
2/3 c Cracker crumbs
1/3 c Onion; minced
1 Egg
1 1/2 ts Salt
1/4 ts Ginger
1/4 c Milk
1 tb Shortening
2 tb Corn starch
1/2 c Brown sugar; packed
1 cn Pineapple tidbits; 13.5 oz
| drained (reserve syrup) 1/3 c Vinegar
1 tb Soy sauce
1/3 c Green bell pepper; chopped
Mix thoroughly beef, crumbs, onion, egg, salt, ginger and milk. Shape mixture by rounded tablespoonfuls into balls. Melt shortening in large skillet; brown and cook meatballs. Remove meatballs; keep warm. Pour fat from skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Poor into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add meatballs, pineapple tidbits and green pepper; heat through.

2-4 drops of hot sauce
pineapple syrup (reserved)
slurry: 1 tbsp cornstarch + 1/4 cup water
1/2 thumbsized ginger (pounded)
Vegetables:
2 medium red onion
2 large tomatoes
1 small red bell pepper
1 small green bell pepper
1-2 stalks celery
1 cup pineapple tidbits
1 small cucumber (skin on)

Sweet and Sour Meatballs
I can’t think of a better game day or cocktail party appetizer than these retro meatballs. With a sticky, sweet-and-sour pineapple glaze, they remind me of the 60s, when the tiki bar trend really flourished in New York City. The key to keeping these tender is to not overwork the mix of pork, veal and chicken. Make extra, they will fly off of the potluck table.

Great for appetizers, or, what I took them for was a football game. It is easy to just grab a couple and go. No need to make a plate and fuss.. ;)
3/4 lb. (3/4 of 16-oz. pkg.) frozen prepared meatballs
1 pkg. (16 oz.) frozen stir-fry vegetables (sliced green, red and yellow peppers and white onions)
1/4 cup apricot jam
1/4 cup KRAFT CATALINA Dressing
2 Tbsp. soy sauce
COMBINE all ingredients in large skillet; cover.
COOK on medium-high heat 10 min. or until meatballs and vegetables are heated through, stirring occasionally.
SERVE over hot cooked rice or pasta, if desired.
Special Extra
Add 1/2 tsp. each ground ginger and garlic powder to the sauce while cooking.

Sweet and Sour Meatballs
1 tablespoons canola oil
1 red bell pepper
1 green bell pepper
398 ml canned pineapple chunks with juice (about 2 cups with pineapple and juice)
1 teaspoon minced garlic
1 teaspoon minced ginger
1 1/4 cups granulated sugar
3/4 cup white vinegar
1/2 cup tomato ketchup
3 tablespoons corn starch
2 tablespoons low sodium soy sauce
salt and pepper
INSTRUCTIONS:
In a large skillet, saute peppers on oil until crisp-tender.
Add garlic and ginger and cook 1 minute.
Stir in the pineapple chunks with juice.
In a large glass measuring cup or bowl, whisk together the sugar, vinegar, ketchup, corn starch and soy sauce. Add to the pan with the peppers and pineapple.
Add the meatballs, and simmer for 5-10 minutes until thickened and meatballs are heated through.
Taste and adjust salt and pepper if necessary. If desired for a milder sauce, stir in 1/4 cup of water or broth.
