Fried Candied Sweet Potatoes
OLD SCHOOL SWEET POTATO ???? PIE ???? SQUARES (FRIDAY NIGHT PIE OF THE WEEK SEGMENT)
This is my fancy way to serve sweet potato pie for my home parties
Its just a little extra step to impress your family and friends
OLD SCHOOL SWEET POTATO SQUARES:
Recipe:
2 eggs
2 cups mashed sweet potatoes
1 1/4 cups evaporated milk
1/2 cup sugar
1/3 cup packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 tablespoons vanilla
4 oz melted butter
2 roll out pie dough(you can make your own too)
Prep time: 10 minutes
Baking time: 55 minutes
Preheat the oven to 350 degrees.
In a large mixing bowl, beat the eggs. Add the mashed sweet potatoes, evaporated milk, butter , vanilla both sugars, cinnamon, and salt. Beat to combine, 1 to 2 minutes.
FOR PIE DOUGH METHOD: roll dough into the large thin rectangle. Make sure the rectangle is larger than the baking pan. Cut a 9 x 13 inch rectangle using a knife.
Lightly butter the bottom and sides of baking pan. Add parchment paper into baking pan. Cut each corner of parchment paper going toward the inside of the baking pan. This will allow the parchment paper to fit inside of the baking pan.
Roll the dough onto the rolling pin. Lightly flour the dough to prevent the dough from sticking to itself. Roll dough off of rolling pin into the inside of the baking pin. Press and stretch dough on to the bottom of baking pan.
Pour Sweet potato batter into baking pan fitted with the parchment paper and par baked pie crust Spread batter around baking pan using spatula. Shake pan slightly to make batter more even.
Bake in the center of the oven for about 55 minutes, until filling is set.
Once the mixture cools completely, flip the pie out of the pan onto a flat surface such as a sturdy chopping board. From there, place a flat serving dish onto the top of the pie and flip the pie over onto the opposite side. Cut the pie into 15 squares and serve. For best results bake the pie one day and serve it the next. The flavors will settle and increase overnight.

Note** Don't overthink this recipe. I combine the ingredients in portions and make sure I use all of the ingredients listed. Since it's all going to be combined in a large bowl, how you combine the ingredients is not as important as making sure you include everything.
You absolutely must taste the sweet potato batter to make sure it is sweet enough and the spice flavor is balanced. This is one of the reasons Sweet Potato pies can be a bit challenging. This recipe has been around for more than 70 years, it is consistent and delicious. You may freeze these pies for up to 6 months.
Sweet Potato Pie Recipe
INGREDIENTS
5 medium-sized sweet potatoes, cooked (Boil until a knife inserted easily comes out, allow to cool completely.) This will yield about 4 – 4 1/2 cups of cooked sweet potato pie filling.
4 large eggs
2 cups sugar (reserve 1/4 cup to add at the end of mixing to adjust sweetness)
½ cup light brown sugar
1 2/3 cups Evaporated milk (1 large 12 oz. can)
1 ½ stick butter (12 ounces) melted, cooled
1 1/2 tablespoon vanilla extract *Ronald Reginald Mexican Melipone Vanilla - A superior Vanilla Extract made in New Orleans

½ cup honey
3 tablespoons Bourbon whiskey (optional)
1 heaping tablespoon flour
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
½ teaspoon nutmeg
½ teaspoon mace
DIRECTIONS
Mix the sweet potatoes in a food processor or wide-mouth blender. You may need to do this in stages, do not over-fill the food processor or blender.
In a large bowl, add the eggs, sugars, evaporated milk, melted butter, honey, bourbon, spices, and flour. Whisk until smooth.
Add 1/3 of the sweet potato and 1/3 of the egg/milk/sugar/spice mixture to the food processor or blender and blend until smooth. Pour in a large clean bowl.
Repeat the step above again, then one last time until all ingredients are blended and in the bowl.
*** Taste: Adjust the sweet potato batter adding the reserved 1/4 cup sugar if needed, and a pinch of salt if needed.
The sweet potato filling will be smooth and slightly thick.
This mixture will make 3 regular pies or two deep-dish pies.
Bake the pies in a pre-heated oven at 350 degrees on the middle rack for 45-50 minutes, until firm and does not giggle. Allow pie to cool to room temperature, then box and refrigerate. Serve cold or at room temperature.

Sweet Potato Pudding Recipe
2 Cups of Sweet Potatoes (cooked & mashed)
1/2 Cup Flour
1/2 tsp. Baking Powder
1 Cup Sugar
3 Egg Yolks
1 Cup Evaporated Milk
1 tsp. Vanilla Extract
1 tsp. Allspice or Nutmeg
2 Tbs. Butter (melted)
1/2 tsp. Salt
Bake @350 degrees for 40 mins or until pudding becomes firm. Let it cool for 15 mins and Enjoy!!

How to Make a Sweet Potato Pie | Sweet Potato Pie | Thanksgiving Recipe
Who's ready for Turkey Day??!! Try my sweet potato pie recipe below????????
2 cups sweet potatoes (mashed)
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp + pinch salt (I used table salt)
1.5 Tbsp lemon juice (start small and add to taste)
1.5 tsp pure vanilla extract
1/3 cup half n half (room temp)
2 eggs (room temp)
1 Tbsp flour
4 Tbsp unsalted butter, melted
1 Deep dish pie shell (I used Mrs. Smith 9 deep dish flaky pie crust)
This recipe will only make 1 pie. You'll need 2-3 medium sized sweet potatoes (roughly 2.5 lbs). Bake potatoes at 425°f for 1 hour or until tender. Let cool completely then smash with a masher or fork. Measure out 2 cups of sweet potatoes in a glass measuring cup. Blend on medium speed for 4-5 minutes to get smooth creamy texture. Remove any potato strings from blender, then add other ingredients. Mix well to combine. Don't overmix after adding the flour. Bake on 350°f for 40 - 50 minutes. Pie will be slightly jiggly in the center. Let set for a couple of hours. To blind bake pie shell set oven to 375 and bake until crust reaches desired doneness. All ingredients should be at room temperature. Taste it as you make it. Enjoy!
All sweet potatoes are not the same, don't use bad potatoes ones.
