How To make Sweet Potato Cheesecake
Crust: 1 1/2 c Graham cracker crumbs
1/4 c Granulated sugar
1/3 c Butter or margarine; melted
Cheesecake: 3 3 oz pkgs cream cheese; soft
1 c Granulated sugar
1/4 c Light brown sugar
1 3/4 c Sweet potatoes, mashed
2 Eggs
2/3 c Evaporated milk; undiluted
2 tb Cornstarch
1/4 ts Ground cinnamon
1/8 ts Ground nutmeg
Topping: 2 c Sour cream; room temperature
1/3 c Granulated sugar
1 ts Vanilla extract
Recipe by: Sweet Potato Festival, Vardamon, Mississippi, 1994 Crust: Combine crumbs, sugar, and butter in bowl. Press onto bottom and 1 inch up on sides of 9 inch springform pan. Bake at 350 degrees for 6 to 8 minutes. Do not allow to brown. Remove from oven and cool. Cheesecake: Beat cream cheese, sugar and brown sugar in large bowl. Beat sweet potatoes, eggs, and milk. Add cornstarch, cinnamon and nutmeg. Beat well. Pour into crust. Bake at 350 degrees for 55 to 60 minutes or until edge is set. Topping: Combine sour cream, sugar and vanilla. Spread over warm cheeseca Return to 350 degree oven and bake 5 minutes. Cool on wire rack. Remove side of pan and chill several hours or overnight.

box of graham crackers
stick of butter
Sweet Potatoe Filling
TASTE BEFORE ADDING THE EGG
Boil 8 Sweet Potatoes
Half cup of brown sugar
Half cup of sugar
2 sticks of softened butter
Cup of cream
Table spoon of Vanilla Extract
2 eggs
Pinch of salt
Nutmeg
cinnamon (ADD More cinnamon please than the other spices)
Ground ginger
Cheesecake Filling
2 8 oz cream cheese, softened
1 stick butter (softened)
1 large egg
1 teaspoon vanilla extract
1 cup sugar
Layer it! and gently swirl the top.
350 for about 1 hour till the side is cooked but middle is jiggly.
Let it COOL DOWN for an hour before putting it in the fridge.
ENJOY!

Bake crust on 350 for 10 min and sit aside to work on filling

3 (8 oz Packs of Cream Cheese (Softened)
1 Cup Granulated Sugar
1/4 Cup Dark Brown Sugar
1-3/4 Cups of Mashed Sweet Potatoes (about 3 or 4 Potatoes
2 Eggs
2/3 Cup of Evaporated Milk
3 Tablespoon of Cornstarch
1/2 Teaspoon of Ground Cinnamon
1/4 Teaspoon of Nutmeg
1/8 Teaspoon of Allspice
2 Teaspoons of Vanilla Extract
1/4 Cup of Sour Cream if you want a creamier Cheesecake, if not DON’T add it!

What you will need
Sweet Potato Filling:
2 Large Sweet Potatoes
1/2 Cup Softened Butter
1 Cup Sugar
1/2 Cup Evaporated milk
2 Large Eggs (Room Temp)
1/2 Teaspoon Nutmeg
1 Teaspoon Cinnamon
2 Teaspoons Vanilla Extract
Cheesecake filling:
3 eight Oz blocks Cream Cheese (Room Temp)
3 Eggs (Room Temp)
1 Cup Sugar
2 Teaspoons Vanilla Extract
Crust:
4 Cups Golden Gram Cereal
5 Tablespoons Melted butter
2 Tablespoons Sugar
Notes: Baked sweet potatoes for 1 hour at 375. Pre baked crust at 350 for 8 mins. Baked Sweet Potato Cheesecake at 350 for 55 mins. Let cool for 4 hours then refrigerate overnight for best results.
