고구마 쿠키 만들기 Sweet Potato Cookies Recipe | 한세 HANSE

안녕하세요 오늘은 오랜만에 고구마 쿠키를 만들었어요
예전에 인기가 많던 쿠키인데 오랜만에 다시 만들어봤어요
단순해보이지만 만드는데 오래 걸리고 정성도 많이 들어가요
저는 최대한 틀이 필요 없고,
쉬운 방법으로 바꾼거라 오리지널 레시피나 모양이 차이가 조금 있을 수 있어요
고구마가 그렇게 많이 들어가진 않지만 고구마 맛이 딱 적당히 나고 든든한 쿠키에요
밤고구마로 만들어야 돼요 저는 밤고구마라고 해서 샀는데 꿀 고구마 였어요
그래서 반죽이 좀 더 질어서 덧 가루를 뿌려가며 만들었어요
완성 모양은 마음에 안들지만 쿠키가 바삭하고 속에 들어있는 패티가 맛있어서 올려봅니다!
▶재료 (8~10개 분량, 14시간 내외 소요)
+ 고구마 쿠키
무염버터 120g, 슈가파우더 70g, 계란 노른자 2개, 고구마 50g, 박력분 130g, 강력분 40g, 바닐라빈 1/2개, 덧 가루
+ 고구마 패티
무염버터 70g, 슈가파우더 60g, 계란 1개, 바닐라빈 1/2개, 연유 10g, 고구마 70g, 아몬드가루 90g
+ 마무리
화이트 코팅 초콜릿 100g
★ 고구마는 패티, 쿠키 모두 합쳐 1개 정도 필요하지만 고구마 크기에 따라 더 필요 할 수 있습니다 (중간 사이즈 보다 조금 큰 고구마를 사용했어요)
+ 만드는 방법
고구마를 완전히 익혀준 뒤 껍질을 벗기고 체에 한번 걸러줍니다
뜨거운 상태일 때 체에 걸러야 잘 걸러집니다
(찌는 방법 보다는 오븐에 굽는 방법을 이용해주세요)
재료는 모두 실온에 두어 찬기가 없는 상태일 때 작업해주세요
1) 파트 슈크레
실온의 버터를 풀어준 뒤 슈가파우더를 넣고 섞어줍니다
노른자를 넣고 섞어주고, 고구마와 바닐라도 넣고 순서대로 섞어줍니다
박력분과 강력분을 체에 쳐서 넣은 뒤 섞어줍니다
날가루가 보이지 않을 만큼 섞이면 비닐에 담아 냉장실에 넣어 12시간~24시간 정도 휴지시켜줍니다
반죽을 꺼내 덧 가루를 뿌려준 뒤 밀대로 얇게 밀어줍니다
롤러나 포크를 이용해 반죽에 구멍을 뚫어줍니다
쿠키커터를 이용해 잘라준 뒤 팬위에 올려줍니다
오븐을 예열해줍니다 (예열하는 동안 냉장실에 쿠키 반죽을 넣어둡니다)
계란 물을 발라 예열된 180도 오븐에 10분간 구워줍니다
(저는 계란 물 준비해놓고 까먹어서 안 발랐는데 바르면 윤기 나고 구움 색이 잘나요!)
완성된 쿠키는 식혀줍니다
2) 고구마 패티
실온의 버터를 풀어준 뒤 슈가파우더를 넣고 섞어줍니다
계란과 연유를 넣고 섞어줍니다
아몬드가루를 체에 쳐서 넣고 고구마도 같이 넣어 섞어줍니다
가루가 보이지 않을 만큼 섞이면 원형 깍지를 끼운 짤주머니에 반죽을 담아줍니다
팬 위에 약간의 간격을 두고 동그란 모양으로 짜줍니다 (쿠키 반죽과 크기가 비슷하도록)
팬에 짠 패티 반죽은 마르지 않게 덮어 냉장실에서 단단하도록 굳혀줍니다
(1~2시간 이상)
오븐 예열이 끝나면 반죽을 바로 꺼내 구워줍니다 (예열된 230도 오븐에 7-8분간 구워주세요)
구워진 패티는 식혀줍니다
(고구마 쿠키 틀이 있다면 슈크레 반죽과 같은 시간에 만들어 냉장실에 12시간 넣어두고
함께 작업하면 훨씬 편합니다)
3) 마무리
화이트 초콜릿은 녹여서 준비해줍니다
쿠키 2개 사이에 패티를 넣어 초콜릿을 살짝 발라 고정시켜줍니다
붓을 이용해 옆면에 화이트 초콜릿을 발라 굳혀줍니다

120g unsalted butter, 70g powdered sugar, 2 egg yolks, 50g sweet potato, 130g cake flour, 40g bread flour, 1/2 vanilla bean, dusting flour
+ sweet potato patty
70g unsalted butter, 60g powdered sugar, 1 egg, 1/2 vanilla bean, 10g condensed milk, 70g sweet potato, 90g almond powder
+ finish
100g white coating chocolate

Recipe:
About 4-4.5 lbs cooked sweet potatoes
1-2Tbsp vanilla
1-1.5 tsp cinnamon
4+ cups rolled oats
Preheat oven to 375 and line two cookie sheets with parchment paper. Blend sweet potatoes, vanilla, and cinnamon. Stir in rolled oats. Drop spoonfuls of batter onto cookie trays. Bake about 25min or until golden brown and firm.

SWEET POTATO COOKIES
Mrs.Vahchef is very fond of cooking and her Recipes are very unique and fit for busy women specially working women
Sweet potato cookies are deep fried cookies and can be packed in tiffin boxes for kids as a snack recipes.
INGREDIENTS:
Sweet potato(boiled and mashed) 1 cup
All purpose flour 1 cup
Cardamom powder 2 pinch
Baking soda 1 pinch
Sugar 3 tbs
Water(to mix dough) ¼ cup
Oil To fry
METHOD:
1. Boil sweet potato and remove skin and mash it nicely and transfer into a bowl.
2. Take a bowl, add all purpose flour, cardamom powder, baking soda, sugar, butter, sweet potato and mix nicely using water to make a slightly hard dough.
3. Rest dough for 5-8 mins, dust some flour and roll dough into slightly thick sheet.
4. Cut it with flower shape cookies and heart shape cookies mould.
5. Heat oil in a pan and deep fry the cookies on initially on slow flame later increase the flame fry until it is crispy and golden in colour.
6. Transfer into plate and store in airtight container for 10-15 days.
7. Now sweet potato cookies are re ready to serve.

Recipe
SWEET POTATO BUTTERMILK BISCUITS
1 ¾ cups flour
2 tablespoons light brown sugar
2 ½ teaspoons baking powder
1 teaspoon Kosher salt
½ teaspoon baking soda
6 tablespoons chilled unsalted butter + more for brushing tops
*¾ cup chilled sweet potato puree
1/3 cup buttermilk
The dough:
In a large bowl, whisk together flour, light-brown sugar, baking powder, salt, and baking soda. With a pastry blender or your fingers, cut in 6 tablespoons chilled butter, cut into pieces until the mixture resembles coarse meal, with some pea-size lumps remaining.
In a small bowl, whisk together chilled sweet potato puree and chilled buttermilk.
Stir quickly into flour mixture until combined. Do not overmix.
The shape:
Turn out dough onto a lightly floured surface and knead very gently until dough comes together but is still slightly lumpy, five or six times. (Dough can be sticky, so you can work in up to ¼ cup additional flour.) Shape into a disk, and pat to an even 1-inch thickness. With a floured 2-inch biscuit cutter, cut out biscuits as close together as possible. Gather up the remaining scraps and repeat.
The baking:
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Arrange biscuits on the pan – I don’t let them touch so that I can use them for little sandwiches as well as dinner biscuits. Brush with ½ tablespoon melted butter. Bake until golden, rotating once. Bake for 20-24 minutes.
* For the sweet potato puree I bake a few sweet potatoes and remove the skins and smash them and reserve the leftovers for another use.

SWEET POTATO OAT MINI COOKIES
These cookies are really yummy, they are a good size for little hands to hold and healthy.
My little one loves them very much! I have to take the snack pot away from him otherwise he eat the whole pot in less than 10 minutes???? !

INGREDIENTS:
☆Dry ingredients
▪︎1/2 cup of oat flour
▪︎1/4 cup of porridge oat
▪︎1/4 cup of self-raising flour
▪︎1 tsp baking powder
▪︎1/2 tsp cinnamon
▪︎ 2 tsp chia seeds
☆Wet ingredients
▪︎1 cup of cooked sweet potato
▪︎1 ½ large size of ripped banana
▪︎2 tbsp coconut oil
▪︎1/2 tsp of vanilla essence ( or vanilla extract )
** if your cookie batter is too wet, you can add more baking time to 20-25 minutes or till the cookies turn brownish.
