2 c Unsalted butter; softened 1 c Sugar (superfine) 3 tb Frozen tangerine juice Concentrate; thawed 1 tb Fresh tangerine or orange -peel Orange part only 4 1/2 c All-purpose flour; sifted Cream butter and sugar until light and fluffy. Stir in tangerine juice and peel. Add flour; mix well. Divide dough in half. Press each portion evenly into greased and flour 8-inch round cake pan. Decorate edges by crimping or pressing with tines of fork. Prick with fork to score top into pie-shaped wedges. Bake on center rack in preheated 325-degree oven 20 to 25 minutes, until shortbread is golden and edges are light brown. Remove from oven and cut into wedgesalong fork scored lines. Cool completely in pan. Makes 32 cookies. -----

Tangerine cookies: fragrant and crumbly they are really inviting!
INGREDIENTS 130g (1/2 cup) of butter 100g (1/2 cup) of sugar A pinch of salt 1 egg 50ml (1/4 cup) of vegetable oil Tangerine (zest) 60ml (1/4 cup) of tangerine (juice) 400g (3 1/4 cups) of flour 3g (1/2 tsp) of baking powder Sugar grains
METHOD 1. In a bowl add the butter, sugar, and salt, and mix with a spatula until the butter and sugar dissolve. 2. Add the egg, vegetable oil, tangerine zest, and juice and continue mixing. Sift the flour and baking powder and continue mixing. 3. When all is combined well start kneading with your hands to obtain a smooth dough. 4. Take the part of the dough with your hands and make the cookie shape. Coat each cookie with sugar grains. 5. Transfer the cookies to the baking tray covered with parchment paper. INGREDIENTS
250 flour salt 30ml lemon juice 90g sugar 40ml vegetable oil 80ml water lemon zest 1tsp baking powder
DIRECTIONS 1. Mix together the flour and all the liquid ingredients. Add the baking powder last. 2. Refrigerate the dough for 15 minutes, and shape it into small balls. 3. Flatten each ball and place a slice of tangerine or lemon over each one. 4. Bake at 180°C for 25 minutes.
