3 tb Vegetable oil
4 Garlic cloves
-- finely crushed 1 tb Fish sauce
3 tb -TO
4 tb Lime juice
1 ts Crushed palm sugar
2 Eggs; beaten
12 oz Rice vermicelli
soaked in water for :
20 minutes, drained 4 oz Peeled shrimp
4 oz Bean sprouts
4 Green onions; sliced
TO GARNISH:
2 tb Dried shrimp, ground
Roasted peanuts -- finely chopped Cilantro leaves Lime slices Heat oil in a wok, add garlic and cook, stirring occasionally, until golden. Stir in fish sauce, lime juice and sugar until sugar has dissolved. Quickly stir in eggs and cook for a few seconds. Stir in noodles to coat with garlic and egg, then add shrimps, 3/4 of the bean sprouts and half of the green onions. When noodles are tender, transfer contents of wok to a warmed serving dish. Garnish with remaining bean sprouts and green onions, dried shrimp, peanuts, cilantro leaves and lime slices. Mee Krob is a Thai recipe made from crispy rice noodles mix with a sweet and sour sauce.
The sauce is seasoned with tamarind juice, palm sugar, natural cane sugar, pickled garlic juice, lime juice, chili sauce and fish sauce so its blend of sweetness, sourness and saltiness all in one. Hope you all like it.

Pad See Ew (Thai Stir Fried Noodles)
How to make the BEST Pad See Ew at home! The secret? The right sauce, for one. And secondly, cooking the noodles separately to get some nice caramelisation on them before adding the cooked chicken and vegetables back in. Thai Street Food vendors and restaurants don't have to do this 'cause they have fiercely hot burners. Home stoves just don't have enough heat - so you have to separate them otherwise the noodles just stew and never caramelise!

INGREDIENTS:
1/2 lb thinly sliced beef (I used flank steak)
2 tbsp dark soy sauce, divided
1 tsp cornstarch
4 tbsp neutral oil, divided (I used avocado oil)
2 tbsp low sodium soy sauce
2 tsp fish sauce
2 tbsp oyster sauce
1 tsp sugar
2 cloves garlic, minced
1 bunch or 5 stalks of chopped Chinese broccoli
2 eggs
1 lb fresh wide rice noodles
DIRECTIONS:
1.) In a bowl, combine thinly sliced beef, dark soy sauce, cornstarch, and 1 tbsp of oil. Mix well and set aside.
2.) In another bowl, combine light soy sauce, 1 tbsp dark soy sauce, fish sauce, oyster sauce, and sugar. Stir until sugar dissolves and set aside.
3.) On medium-high heat, add 1 tbsp of oil to a large pan or wok. Once the oil is hot, add the beef and stir fry for 5 min. Once it's done, transfer beef to a bowl.
4.) Wipe the pan clean and add 1 tbsp of oil. Throw in the minced garlic and Chinese broccoli. Stir fry for 1 min. Push the broccoli to one side of the pan. Add 2 eggs and scramble. Incorporate the eggs with the broccoli, then transfer to a bowl.
5.) Turn the heat to medium and add the remaining oil. Throw in the rice noodles. Pour in the soy sauce mixture and stir fry for 2-3 minutes. The noodles will start to get soft and loosen up.
6.) Toss in the Chinese broccoli, eggs, and cooked beef. Keep mixing until ingredients are combined.
7.) Enjoy!
