How To make Tofu Stuffed French Toast
1/4 c Dark raisins
1/4 c Golden raisins
1/4 c Currants
1/4 c Diced candied orange peel or
Candied fruit Without cherries 1/2 c Brandy or rum
1 lb Loaf semolina or italian or
-french Bread 1 lb Extra-firm tofu
2 ts Grated orange or lemon zest
3 Eggs
1 c Plain or vanilla regular
-soy milk 1 ts Vanilla extract
3 tb Melted butter or oil
Or nonstick cooking spray Maple syrup or confe -ctioners' sugar -- (optional) Recipe by: The Washington Post 11/6/96 Soak raisins, golden raisins, currants and candied peel in small bowl with brandy for 30 minutes. Slice bread diagonally into 1-inch slices, discarding ends. Carefully pull center from each slice, leaving about 1/2 inch of bread inside crust. Set aside rings of crusts. Tear centers into 1/2-inch pieces and place in large bowl. Crumble tofu into bowl with torn bread, breaking tofu into bits the size of cottage cheese curds. Drain soaked fruit and add to bowl. Add grated citrus zest. Beat eggs with soy milk and vanilla extract in another large bowl. Pour half of the mixture into bowl with torn bread. Stir with fork until bread is moistened and everything is well combined. Add 2 or 3 bread rings at a time to remaining egg mixture, turning pieces once, when well moistened. Meanwhile, heat half of butter in large, heavy skillet over medium-high heat. Arrange soaked bread rings in pan. Spoon moistened bread and fruit mixture into center of each ring, pressing with back of spoon to pack firmly. Cook until toast is browned on bottom, 3 to 4 minutes. Turn and brown second side. Remove to warm platter. Repeat with remaining butter and bread until all has been cooked. Serve at once, accompanied by maple syrup or sprinkled with confectioners' sugar. Or, cool slices of stuffed toast, wrap tightly in foil and freeze. Reheat in 350-degree oven, wrapped in foil, 15 to 20 minutes. (6 to 8 servings). Variation: Use 1/2 cup each dried blueberries and chopped dried cranberries in place of raisins, currants and candied fruit. Soak in Grand Marnier or Triple Sec. Today we are making Hong Kong-style French Toast (西多士). Think of your standard fabulous French toast, except in sandwich form, stuffed with delicious peanut butter (or strawberry jam, or Nutella!), and a little condensed milk drizzled on top. It only takes 5 minutes to make, perfect for a busy morning. You’re going to love me for this one.

INGREDIENTS
6 slices of white toast
3-5 tbsp of peanut butter or fruit jam (Amazon Link -
2 eggs
3 tbsp of milk
2-3 tbsp of oil to pan-fry
Sweetened condensed milk (Amazon Link -
Chocolate syrup (Amazon Link -
INSTRUCTIONS
Apply a generous amount of peanut butter on one side of the toast. Stack another slice of toast on the top to create a sandwich. Gently pack it tight so they stick together. Repeat for the other sandwich.
I have seen a lot of recipes tell you to trim off the edge for a better presentation but I don’t like to waste food so I am going to keep it.
Crack 2 eggs into a bowl and beat them well until you don’t see any obvious egg white. Then mix with 3 tbsp of whole milk thoroughly. Pour the mixture into a flat container. This will help you to coat the bread easier.
Dip the bread in the egg mixture. Turn to coat all the sides evenly. Once you finished dipping, you will have to pan-fry it right away. Do not wait because it will get soggy quickly.
Add a tbsp of oil to a pan. Pan-fry over low heat until golden brown on all the surfaces.
Drizzle some sweetened condensed milk or chocolate syrup over the toast. Top a piece of butter and enjoy!
Note: Day-old, a bit hardened toast is perfect for this recipe. If your bread is fresh and soft, it will lose its shape after you dip it in the egg batter.

A lot of students (and other people) assume they can't cook because it's so complicated, and so they stick to junk food or the same bog standard microwaved beans on toast because they think cookers are like space shuttles, and any dishes requiring one would be above their skill level. But with the videos in this series I'll be showing people who think they can't cook, how to make food that's really easy, really quick and really tasty!
In this video I show you how to make tofu french toast, an alternative to 'normal' french toast, AKA eggy bread.
