How To make Tomato Basil Sauce For Pasta
1 tb Olive oil
1/2 c Chopped onion
3 lg Garlic cloves, minced
4 Ripe large tomatoes,
Chopped (4 cups) 2 lg Red bell peppers, seeded,
Chopped (2 1/2 cups) 2 c Sliced fresh mushrooms
1/4 c Chopped fresh basil (or
3 tsp dried basil leaves
2 ts Dried oregano leaves
1/2 ts Salt
1/4 c Tomato paste
Heat oil in large nonstick skillet over medium-high heat until hot. Add onion and garlic; cook, stirring occasionally, until onion is soft but not browned. Stir in remaining ingredients except tomato paste. Bring to a boil. Reduce heat to medium; cook, uncovered, for 15-20 minutes or until sauce is thickened and peppers are tender, stirring occasionally. Stir in tomato paste; heat thoroughly. If thicker sauce is desired, puree all or part of sauce in blender container or food processor bowl with metal blade. Serve hot over cooked pasta. Makes 4 Cups

Tomato and Basil sauce
Chef mooney makes a quick easy tomato and basil sauce that you can add to any pasta dish

Ingredients
2 Tbsp butter
3 cloves garlic
1/2 onion
3 Tbsp tomato paste
1 cup heavy cream
1/2 cup Parmesan cheese
Salt & pepper
12 oz pasta (I used rigatoni)
1/3 cup pasta water
Basil & parm for garnish
Cook your pasta in salt in water to package directions (save some pasta water). In a pan over medium heat, add butter, onion and garlic. Cook until softened around 2 minutes. Add tomato paste and cook until lightly caramelized. Add your cream, then season with salt and pepper. Add Parmesan cheese, pasta water and your cooked pasta. Mix well. Serve with basil or fresh Parm.

Ingredients -
400g (14.1oz) - Pasta Of Choice (I Used Spaghetti)
1 Tbsp (20ml) - Olive Oil
1 - Brown (Yellow) Onion, Diced
3 - Garlic Cloves, Thinly Sliced or Minced
2 Cans (800g (1.76lbs) - Diced or Crushed Tomatoes
2 tsp (4g) - Dried Oregano
1 Tbsp (20ml) - Balsamic Vinegar or Red Wine Vinegar
30g (1.06oz) - Fresh Basil Leaves, Stems Reserved
Sugar To Taste
Seasoning To Taste
Garnish -
Basil Leaves
Parmesan Cheese
Cracked Black Pepper
