How To make Tortilla Espanola (Spanish Omelet)
4 tb Olive oil
2 lg Onions; peeled & cut
-into thin slices 2 lb Potatoes, peeled & cut
-into thin slices 6 Eggs
Salt; to taste Pepper; to taste Heat the oil in a large nonstick frying pan. Saute the onions over medium heat for 6 to 8 minutes or until soft but not brown. Drain the onions in a colander, reserving 2 tablespoons of the oil from the pan. Cook the potatoes in boiling water for 4 to 5 minutes and drain in the colander. Beat the eggs in a large bowl and stir in the onions and potatoes; add salt and pepper to taste. Heat the reserved oil over high heat in a heavy nonstick pan or a well- seasoned cast iron skillet. Add the egg mixture and cook for 2 minutes or until the bottom is lightly browned. Place the pan in a preheated 400-degree oven for 20 to 30 minutes, or until the egg mixture is set. Invert the tortilla onto a round platter. Cut into wedge-shaped slices and serve with a salad. NOTE: In Spain, a tortilla isn't the cornmeal flat bread we think of, but a sort of omelet loaded with onions and peppers. This is a popular item at tapas bars, and an easy dinner to make after an evening of celebrating. Nutrients per Serving: 494 Calories, 15 g Protein, 59 g Carbohydrate, 23 g Fat, 5 g Saturated Fat, 411 mg Cholesterol, 116 mg Sodium.

Recipe for 1 inch Tortilla
- Prep /Cook time 45 mins.
- Pan 20cm / 7.8 Inch
- 1 med Onion Julienne Cut
- 700g / 1.5 LBS potatoes peeled
- 500ml / 17oz olive oil, add more to cover the onions and potatoes.
- Pinch of salt
- 5 eggs

Ultimate Spanish Omelette | Omar Allibhoy
Mastering a classic Spanish dish just got easier. The wonderful Omar Allibhoy is back with his favourite recipe for Tortilla de Patatas - or Spanish omelette to you and me!
There may be just three ingredients in this dish but each one is used to create an omelette that has bags of flavour.
Caramelised onion provides a delicious natural sweetness while the softened potato gives texture and depth. Mix through eggs and cook until golden and firm to the touch. The perfect omelette will be slightly soft and gooey in the centre. Makes you want one now doesn’t it?!

Tortilla de Patatas #shorts
Ingredients
- 2 large brown onions, sliced thin
- 4 large potatoes, peeled and sliced thin
- 500ml olive oil (it's a lot I know… but you won't eat it all)
- 6 eggs
- Salt to taste
Method
1. Start by heating the oil in a large frying pan on medium heat.
2. Once hot, add the potatoes and onions.
3. Cook this for 10-12 minutes or until the potatoes just start to soften. You don't want to have this on a really high heat as you don't want any colour.
4. Once the potatoes and onions are cooked, drain the oil from them (don't throw this oil out, it's still perfectly fine to use just keep it in the fridge container until you need it).
5. Whisk together the eggs until they are homogenous.
6. Add the cooked and drained potatoes and onions back to the pan, season with salt and stir.
7. Now pour over the egg mixture and cook, scraping down the edges over medium heat for 4-5 minutes.
8. Once you can tell the base has started to set, place a plate over the frying pan and flip, sliding the tortilla back into the frypan to continue cooking.
9. At this point, you can cook this completely through or still leave it nice and runny in the centre.
10. Enjoy!
