How To make Twin Sisters Vegetables Soup
1 md Onion; chopped
2 Garlic cloves; chopped fine
2 ts Dried oregano
1/8 ts Fresh ground pepper
2 Idaho potatoes; scrubbed, un
1 Zucchini
1 lg Yellow squash
3 Celery
2 Carrots; scrubbed, unpeeled
3 Tomatoes
2 Bay leaves
1 c Cooked kidney beans; or pint
Recipe by: The New McDougall Cookbook Preparation Time: 0:40 Saute the onion, garlic, oregano, and pepper in a small amount of water until the onion is translucent, about 5 minutes. Set aside. Dice the remaining vegetables, except the tomatoes, and place them in a large pot; add the sauteed onion mixture. Add water just to cover the vegetables. Add the bay leaves, bring to a boil, and reduce the heat. Simmer unti the vegetables are just tender, 10 to 15 minutes. Place the tomatoes in a blender or food processor and process until pureed. Pour into a saucepan and gently boil for 20 minutes to remove any acidic taste. Add the tomatoes to the soup, along with the cooked beans. Cook for 30 minutes over low heat. Refrigerate overnight to allow the flavors to "marry." Reheat and serve the next day. 83 calories, 0.5 grams fat per serving.

Learn how to make one of my absolute favourite recipes, Homemade Vegetable Soup. Growing up (and even now), we would have soup at least once a week. If anyone would stop by our house and see we were having soup, their first question would be whether we were sick. But the truth is, we just really love soup and this is our go to recipe. Whether it's the Summer or Winter, homemade vegetable soup is a staple in our household. This soup recipes has been worked on and perfected over the years by my mom and I. We have continued to add flavours that satisfy our Indian food palette. Try this recipe out and I promise you will be hooked. Cook with me and enjoy with your family!
Serve: 10-15 servings
Prep time: 20 minutes
Cook time: 45 minutes
Ingredients
5 Tomatoes
1 Big Garlic Clove (or small ones)
2 Green Chillies (optional)
1 Small Piece of Ginger
1 cup of Cabbage
1 cup of Carrots
1 cup of Green Beans
1 cup of Onions
Bell Peppers
Cauliflower
1 cup of Coriander
1 cup of Spring Onions
1 cup of Quinoa
1 tablespoon of Kitchen King Masala
1 tablespoon of Sambhar Masala
1 ladle of Ketchup
.25 tablespoon of Red Chili Flakes
1 tablespoon of Black Pepper
1 tablespoon of Salt (or to taste)
Ingredients to Garlic Bread
Bread (any type - I used a Rustic burger bun)
Dried Parsley
Red Chili Flakes
Fresh Garlic
On Half Of The Garlic Breads I Topped It Off With
Olive Oil
Spring Onions
Salt
